This cookbook is glorious. The food tastes great and is easy to prepare, with ingredients that are within the reach of anyone with a decent grocery store nearby. Best of all, it proves that lowfat cooking needn't be boring and bland and poorly textured. We cook out of this book every month, and each recipe we've made has been wonderful. I saw Jean-Pierre on Home Matters. He owns a resturant and is a professional cook. I bought his book expecting some very good tasting dishes. I tried a mushroom and a potatoe dish, and they were ok. I also made the chicken dish I saw him cook on Home Matters. I followed the recipe to the best of my ability, but it was just an average tasting dish. I see everyone...

Chef Jean-Pierre's Incredible Cuisine is my favorite cookbook since it is easy to follow and the results are incredible. With over 100 pictures, you can't help but get drawn into some of the most beautifully presented suggestions for cooking seafood, appetizers, soups, meats, poultry and desserts. The sweet potato mash, pumpkin cheescake and brocolli pesto-phyllo pizza are unbelievable! I have tried many of the recipes and given this book as a gift to many of my friends. There are also many suggestions for low fat cooking. It's a winner and should be part of any cook's repertoire. The passion for cooking of the author shines through every page.

This book is the next best thing to meeting Jean-Pierre and enjoying dinner at the Left Bank in Ft. Lauderdale. Jean-Pierre presents a review of basic techniques that can dramatically change how you cook and his recipes bring true cuisine back to family dinners. I'd recommend the book to everyone just as emphatically as I would recommend a dinner at the restaurant AND a cooking class with Jean-Pierre. It's un-beh-lev-able!

I have an extensive collection of cookbooks. This has got to be one of the books that I refer to again and again in order to refresh my cooking repertoire. "Incredible Cuisine" was the first cookbook that I used to impress my boyfriend (now husband), and both my well-traveled father and father-in-law. Almost all the fish and shellfish recipes are divine and the pictures gave me ideas to turn my plates into "works of art."
Back when I was quite the novice cook, my husband brought me over to my father-in-law's home and I made a version of the swordfish with lemon-caper sauce, my father-in-law seriously thought I was a gourmet cook.
I can't thank Mr. Brehier enough!

This is one of my favorite cookbooks, it's always the first book I reach for when I'm looking for ideas or a recipe. The best thing about the book is that all the recipes are healthy and they tast fabulous, you would never know they are low in fat. You must try the sambucca shrimp and the seared sea scallops. I highly recommend it.

This is the best cookbook I have ever used. Jean-Pierre explains the techniques as well as the recipes. The pictures help to show what the dish should look like when finished.

This is a fabulous, fabulous book. Every recipe I've tried is so far above good that I just love using the book. From the smoked ham and cream cheese stuffed pork chops to the seared scallops with ginger lime sauce to the butternut squash and bourbon bisque. I could go on and on. Every recipe is a winner and they're all so EASY. Jean-Pierre is my cooking hero!

Receipes that a novice could follow. Great detail as to basic common sense of cooking and the tools needed to do the job right. Have a cup of tea or coffee, sit back on a sunday morning and enjoy the easy reading. By the time you finish, you will have planned meals that you never thought were possible to prepare on your own.

If you are looking for French recipes with a low-fat twist, then you have got to try this cook book. It is very good. The recipes are very easy to follow and there are pictures of each dish. The ingredients are standard fare ( not like some cookbooks that specifically require exotic ingredients that I'd have pull my hair out trying to find).

I really like that he tries to substitute low fat ingredients for those who want a rich taste without the punishment on the hips. My favorite dishes are the pasta dishes. I never knew you could do so much with evaporated milk and have it taste just like decadent heavy cream. My husband is a fitness fanatic so the low-fat dishes are really appreciated. I am a huge fan of French dishes, and this one is a must. It's very good for every day fare.

I am a professional cook, now retired, but still on the look-out

for cookbooks to enhance my (substantial) library of such.

The item reviewed has many out of the ordinary recipes

easily managed by anyone who likes good food and is willing to

just go a little further so to say.

Chef Jean-Pierre is French but his recipes are influenced

by his Italian mother's recipes of his youth - to me the best

cuisine of all.
