great cookbook, October 9, 2006

I have owned this cookbook for many years. I first purchased it after having a cooking class with the author. The recipes are healthy and very tasty. The interesting thing about this cookbook, is that every recipe has something as a base that you wouldn't think of using. For example butterscotch pudding made from carrots, yes it sounds disgusting and I personaly have always hated carrots, yet this recipe really does taste like pudding.
The recipe for country-style gravy alone makes this book worth buying. I have used that recipe over and over again, and it is now a family favorite at hollidays, and very requested from my husband. The base for that recipe is cashews!
Whenever I make anything out of this book, everyone is impressed that it is vegan and healthy. And it has recipes of all those simple things you miss when you become vegan, like mayo and cheese.
