About the Author

Paul Yellin was born in New York in 1971, but moved to Barbados in 1973. He began to cook professionally in 1973 and has since worked at and helped open successful restaurants in New York, Barbados, Toronto and Berlin. An international chef, with Barbadian style, he is now involved heavily in consulting and has catered for Consulates, Concerts and baseball legend Ernie Banks.

Paul Yellin gives excelent insight into making soulful and refined meals that make tastebuds tingle.
Definitely a welcome addition to the libraries of connaisseurs and amateurs alike!

I've tried some of these out myself and my buddies and girlfriend keep asking for more. A caribbean treasure!!!

The recipes in this book make wonderful use of rum to flavor unusual dishes. Pumpkin Soup has become a regular on our home menu. The flourless chocolate cake is a hit for sure. I think I use a recipe from this book at least twice a month, it really helps to capture the flavors of Barbados. Also the pictures are lovely.

Having visited Jamaica recently and enjoying Jamaican rum, I was curious about this cookbook. I am so glad that I ordered it.
Reading about the history of Jamaican was enlightening and the recipes are not overly complicated. I have several selected to try and look forward to the results. Who knew that cooking with rum could produce such culinary delights!
