Received product in good condition and record time. Great for my homemade summer sausage. First time I used it, all the raw meat turned gray after the addition of the powder, but this is natural. After heating, it will turn reddish again, and will keep very well.

This product can also be used to cure a pork loin into Peameal bacon or real Canadian bacon which is what I purchased it for. the seller was very helpful in resolving a delivery error.

The seller sent it well, packaged and protected. I used it for my first batch of sausage in casing that I have ever made, using Rytek Kutas's book on sausage making. The salts did exactly what was described - the meat turned red when cooked, then settled down and now is an amazing sweet sausage that all my friends are raving about. This seller is awesome, and produces a great product. Thanks so much!

This was not exactly what I was expecting, but it'll do. The problem is that this is not the same potency as the Instacure #1 I bought from Sausagemaker.com or what is the standard as given in the book Charcuterie: The craft of salting and curing (something like that). The pink salt I bought from Sausagemaker (and what is spec'd in Charcuterie) will cure 25 lbs of meat with 5 teaspoons of pink salt but this one says to use SIX teaspoons to cure 25 lbs of meat. So, it is 20% less concentrated than the others. Not a huge difference, but enough to keep it from getting 5 stars on the review.
