My previous cooker, some years old, is the "old school" pot style, with a single handle and a simple pressure release on the top. It works well, but it is somewhat limited in scope --and you have to regulate the pressure essentially by the flame on the stove.

I really wanted something more adjustable, and in addition, more versatile. This pressure cooker is an electric appliance, using a power cord and sitting on the countertop rather than on the stove. Because you use an electric element to heat the unit, you can adjust from low and slow, like a crock pot up to a full pressure cooker to speed along a soup or stew.

Since I had gotten rid of my slow cooker, I realized I could replace not only the old pressure cooker, but get a new slow cooker. And my rice cooker is wearing out (the membrane control on the top is nearing the end of its life.) So this unit could replace all three. Theoretically, you can do low-acid canning (vegetables and meats) but I prefer to use a unit with a visible pressure dial and in addition, you can't do a huge batch of bottles with this unit so I'd say while you "could" do it, I wouldn't, if I were serious about low-acid canning, choose this as my appliance of choice.

My first dish was a chicken rice pilaf, adapted from an Indian recipe. The pilaf is designed for pressure cooking (common in Indian recipes) and it worked well despite the fact I had to adjust for the recipe specifying "whistles" which is how the older pressure cookers told you they'd reached proper pressure.

I like having this on the countertop rather than on the stove, and it's fast. I often have to cook dinner when I come home and I don't have time to really do a long cooked dish, and on the weekend, if I'm cooking in advance for the week ahead, this speeds up my work. Big thumbs up.

I was looking for an appliance to replace my slow cooker and ideally wanted a stainless steel insert. That is not easy to find but I did find the instant pot. Pressure cooking was foreign to me but as I began to read more I realized this sounded even better than slow cooking! I received the pot in a timely manner and it is a nice looking piece. My first meal was chicken breasts- frozen!!! That's right, I put frozen chicken breasts in with onions and a can of rotel and seasonings. In 25 mins they were tender, moist and able to be shredded with a fork! The chicken was delicious for chicken tacos. I look forward to experimenting more and I did use the browning option which worked well for another meal. You can use this with the lid off. The stainless pot is quite solid and cleans up well. I am very happy with my instant pot so far and recommend this purchase.

Fantastic kitchen must-have! February 24, 2012

I have been looking for a lead-free slow-cooker for awhile and was recommended this product since it has a stainless-steel insert and can be used as a slow-cooker. However, that is not even the best thing about this item - the pressure cooker function is! I am new to the pressure-cooker world and remember my mom using one occasionally growing up (the stove-top version, of course). I never really thought I "needed" a pressure cooker, but after having this one for less than a week and using it 3 times already, I am SOLD. My first try was black beans. I added 3 times as much water as beans just to be safe (poured off the extra when done and measured it, could have only used twice as much instead of three times as much and it would have been the right amount). From dry beans to perfectly cooked in about 30 minutes! My next try was a pork sirloin and it was good also, about as tender as you could probably get a pork sirloin. My third try was some chicken fajitas. I used about 2 lbs of chicken (bone-in 'cause that's all I had) and an onion and a bit of red pepper, plus some chicken broth and spices. Cooked to PERFECTION in 15 minutes! I just had to remove it from the bone and shred it and it was ready to be served! I followed a slow cooker recipe that said to cook it on low for 8 hours, but I used the pressure cooker function for 15 minutes and it was so juicy and yummy. I can't recommend this product enough!

Note: This is the same product as the previous model, just with the added browning/saute function. So the reviews for that will also apply to this item. :)

Work pretty much as described
