The beauty of this book is that every recipe was created to be prepared for one person or two--and exact measurements are given for each option--so there's no guessing about how to reduce a recipe and no wasting of excess food. The recipes cover a wide range of ethnicities, but all are simple to prepare and use easy-to-find ingredients. A more seasoned cook might complain that Mair relies too heavily on prepared sauces, dried herbs, and the ubiquitous "garlic granules," but for those new to the kitchen or those who simply want tasty, easy-to-prepare, and healthful vegetarian meals, this book is a helpful guide. Mair--who is coauthor of the popular Simply Vegetarian!--even includes a handy section of cooking tips for beginners, shopping hints, food storage tips, tricks for converting recipes for restricted diets, and advice on stocking the pantry so that flavorful meals can be improvised at the drop of a hat.

The book includes chapters on every course, from appetizers, dips, and snacks to salads, sandwiches, pasta dishes, sauces, spreads, and a whole lot more in between. About the Author

Nancy Mair is an accomplished cooking instructor and professional caterer who co-wrote the renowned 1989 cookbook Simply Vegetarian! She is also a landscape designer, and has been a flight instructor for hot-air balloons, a firefigher, and a free-style skier. She lives near Nevada City, California with her husband.

Aside from the delicious and easy recipes, I love the tips on how to prepare dishes without worrying about leftovers!! As a single woman who can't afford to go out to eat or spend a lot of money on groceries, this book is a lifesaver!!!!

This cookbook would be a good buy for someone newly cooking for him or her self - a good gift for a college student. It has a range of easy vegetarian dishes, shopping and vegetable prep tips, and recipes scaled to serve one or two people. It's really a book for the neophyte cook, someone looking to save money, make themselves dinner, and not go to extra trouble or expense.

More experienced folks looking for innovation will likely find it too basic and repetitive. Someone looking for an encyclopedic vegetarian equivalent to "The Joy of Cooking" would do well to seek out Deborah Madison's "Vegetarian Cooking for Everyone."

Since I'm not the greatest cook, I was so excited when I stumbled across this book and found practical recipes that any guy can follow. They are simple and really tasty, with easy-to-follow directions and helpful hints. Plus, the recipes are just the right size for when I'm either eating on my own or entertaining a friend for dinner. This book is a great resource for every kitchen.
