This review is from: Introduction to Human Nutrition (The Nutrition Society Textbook) (Paperback)
This text is being used for a nutrition class at the Art Institute, against the advice of the instructor (who has been a nutritionist for a couple of decades).

The text is probably fine for those who have a couple of classes in chemistry and biochemistry under their belt and are looking for a rigorous scientific approach to nutrition. For the rest of us, though, it is a very, very difficult read. (I think I understood two sentences in all of chapter 5 on carbohydrates.)

If you don't have the biochem background, make a beeline instead for Nutrition for Foodservice and Culinary Professionals.
