About the Author

Christina always knew she had issues with bread and pasta, but didn't learn she was celiac until she was 21. She is now married with six children, three of which are also celiac. Christina has learned that you don't have to give up your favorite foods to eat gluten free. She embarked on a quest to create gluten-free foods that taste good, are simple to make, and most importantly, are foods her kids will eat. I think this is a wonderful cookbook. Going gluten-free can seem like a daunting task, especially when young children are involved, but Ms. Davis makes it simple and most importantly: TASTY! I really like that there aren't THOUSANDS of recipes to wade through or strange, hard-to-find ingredients. The author states that these are her and her children's very favorite recipes in the world. Turn to any page and you have a meal or dessert to try right away. The book gives you many kid approved recipes in several categories. Both the UNflour mix and the soup mixes are essential for any busy cook to have on hand in order to whip up casseroles and other meals quickly. The pages are attractive and uncluttered and the recipe directions are simple and easy to follow.

My sister-in-law checked out about 30 books form the library trying to find something to help her family to be able to eat again. They have multiple varieties of food allergies and this was the BEST book she found. It addressed all of the needs of her families dietary issues and helped her to be able to cook normally again! We love the yummy recipes and look foreward to changing some of our favorite recipes into Gluten Free ones with the help of this book. Thank you, Thank you, Thank you!

In the first panicked days after a Celiac Disease diagnosis, I had no idea how to feed my husband without poisoning him. Enter: The lovely Christina Davis and her practical way to feed your family and yourself. Who knew this GF thing could become second nature so easily? We couldn't live without the cream soup or pizza dough recipes. Recipes can be just GF or most can be easily adapted to GFCF (which was great to have handy when my son was diagnosed with Autism). For someone who was overwhelmed at first and now has moved on to experimenting and playing with new flours- I still go back to these recipes over and over again. You will not ever regret getting this book.

This cook book is absolutely incredible! It is always a challenge to find gluten-free food that actually tastes good and is easy to make. This book makes it so easy to cook gluten-free and the food is delicious. The "un-flour" used throughout the book is truly inspired. Gluten-free flour in general is very grainy and has a distinct taste, but with the "un-flour" you can hardly tell a difference. All of these recipes have been tried, tested and proven. I will use this book every day!

This book is my go-to cookbook! It is filled with recipes that are easy to make, budget conscious, and use ingredients that are readily available. My picky eaters love all the recipes! The color photographs that accompany each recipe are beautiful and help me to have a visual of what the finished product should look like. I appreciate how the author includes ways to substitute dairy products in her recipes. I can't wait for more books by this author!

I recently picked up Irresistibly Gluten Free, by Christina Davis. I have had several requests recently in my catering business and from friends for gluten-free foods, and I thought this book would be a good start. Since then, I have acquired several other gluten free cookbooks, but this one remains my favorite. Although the book is only 75 pages, and contains only about 32 basic simple recipes, the recipes that it does contain are all pictured. Pictures are a must for most cooks; we want to know just what the dish is supposed to look like. Every recipe I have tried so far from this book has turned out great.

One of the most versatile recipes in this book is “Unflour,” which is an all-purpose gluten free flour mix that can be used in dozens of gluten-free recipes in the book; I’ve also used it in other recipes with good results. There is a recipe for a gluten-free Cream Soup Mix, which is similar to a Cream Soup Mix that I keep on my pantry shelf and use constantly. The gluten-free version is a perfect substitute for canned soups, and as a bonus, uses powdered milk from storage, which doesn’t have a long shelf-life, and needs to be rotated.

Irresistibly Gluten Free has valuable information about eating gluten-free, has explanations on each of the recipes, and has a table of contents that is easy to read. There is no index, but because the book is small, it really isn’t necessary. The recipes call for ingredients that are easy to find; most at larger grocery stores, so there’s no need to make an extra trip to a health food store.

If there is a negative about this book, it’s that it could contain more recipes. I’m anxiously awaiting a second book with more dishes. There are other dishes, however, at the author’s website.

My family & I are really enjoying this cookbook. The recipes are affordable and simple to make and we will actually enjoy eating them. The Unflour that is used in many of the recipes throughout the book has only 3 ingredients and I had no trouble finding them. My family loved the bread I made 2 days ago. I used the almond meal, which I made by grinding up whole almonds, in place of the dry milk. We have enjoyed the bread with butter, jelly, honey and today I made cinnamon toast. The quick & easy recipe made 2 loaves so I sealed them in saran wrap after they cooled and they have kept nicely in the refrigerator. I will be making this bread every week. I can't wait to try the rolls, muffins, waffles, pancakes, & doughnuts. I also made the corn dogs which were a big hit with the kids...and the adults. There are colorful photos for every recipe and most have only 6-10 ingredients. Be sure to visit Christina's website for printable mix labels to make cooking even easier.
Update: The Tea Party Quiches turned out great! I used Rice Dream in place of the milk. They were easy to make and my family loved them...they did not last long!
New Update: I made the Italian Chicken and served it over GF spaghetti. It was delicious & there were no leftovers!
