This chopping block is not only beautiful with its dark center and light edges, it’s also an environmentally responsible product. While the board has the rich grain found in wood products, it is actually made of bamboo, a completely renewable grass. Aside from its positive impact on the environment, bamboo has become the cutting-board material of choice among professional chefs as it has a longer lifespan than traditional hardwood boards. Bamboo is 16-percent harder and lasts three times longer than maple (the former material of choice) and weighs 1/3 less than oak so is easier to lift from countertop to stockpot to dump chopped ingredients. Another perk is that bamboo absorbs little moisture so is not likely to experience the shrinking and swelling that can eventually warp hardwood blocks. I've owned this cutting board for well over five years and use it almost every day. It is just the right size for pairing vegetables, cutting up a small piece of meat, or other general purpose tasks. Bamboo is a great material for a cutting board because it has a very fine grain, meaning that it doesn't splinter, and puts up with a whole lot of abuse from a knife blade. I've used bamboo and maple cutting boards, and I've found that the bamboo boards don't seem to retain as much odor as maple boards. They also wash very easily and are aesthetically pleasing. I love my Island Bamboo cutting board and would recommend it to anyone who wants a nice, light weight cutting board and doesn't like the feel of plastic.
