Book Description

May 2005
This is a Jamaican cookbook with traditional and contemporary recipes. However, rather than just a cookbook filled with funny anecdotes and imperial measurements that would make most self-proclaimed chemists blush, it’s also a book with heart. It was written from an outsider’s perspective after an unexpected and long soul searching journey. My travels have allowed me to discover a love and passion for Jamaica, my second home. This love has brought me to a new and exciting chapter in my life. I’ve been married to a Jamaican man for five years, and now the journey has come full circle with a marriage of cultures and a need to tell a tale. It’s my story told through food, so you are seeing it through my eyes. Each of the recipes measures the depth and breadth of a cultural diversity, and is a reflection of its people, as they are family and friends inspired. So although at the end of the day the theme is cooking, the aroma is undoubtedly Jamaican. It’s the intoxicating aroma of a people, a story of a culture whose motto is "out of many, one people." This is the story that I set out to tell approximately a year and a half ago. My audience is anyone with an appreciation for really good food, a sense of adventure, but more importantly, an audience that is willing to embrace a wonderful culture. All of my recipes are easy to follow and are full proof; you can’t go wrong. It’s effortless cooking at its best, and if you like lots of flavor in your food, look no further. The best thing is, your friends and family will think you are a culinary genius. What sets Jamaican food apart from any other is the ability to combine many different cultures and fuse them to create one cuisine, Jamaican. Although Jamaica is very exotic, if you break down the ingredients to its root core, you will see that they are everyday ingredients such as thyme, soya sauce, garlic, ginger, and scallions, just to mention a few. Although as with anything new, expect a few exotic ingredients for you to discover. So don’t be afraid to explore Jamaica, even if it’s only with food. It's comfort food at it’s best, with a twist or two. It is food that brings family and friends together to enjoy great conversations and amazing food. Cooking is about choices, which is important, because after all, you are ! going to eat the food. I have given you many recipes from which to choose, from the very traditional to the more contemporary. I’ve even added a little bit of me to the classics.

5.0 out of 5 stars Love the Patties!, June 2, 2005
This review is from: It's About Thyme (Paperback)
Yes Beef Patties is where it's at, and trust me for me to actually make them, and they came out tasting better then the frozen patties, anyone can do it. I love beef patties, and the best thing is these ones are the best patties I've ever eaten... I still can't believe I made them myself. Can't wait to try the rest of the recipes!

5.0 out of 5 stars easy and delicious, August 3, 2005
This review is from: It's About Thyme (Paperback)
this is one of the best cookbooks I own. The seafood section is tops! She has opened my eyes to Jamaican food and I'm planning a trip next year to visit the island. Anyone can cook her food, this gets 5 thumbs up from me.

5.0 out of 5 stars different, June 14, 2005
This review is from: It's About Thyme (Paperback)
I love this book because it's very different from any other cookbook I've bought. I have made many recipes and all turned out great! My favorite would be the jerk, festivals, codfish balls and broiled salmon, so far. Oh, made the chocolate cheescake and I have to say, the best ever! One thing author makes a mistake she says to add melted chocolate but no melted chocolate in the ingredients but that' okay, I figured it out myself and when I tasted it I was in heaven..
