Baked Chicken and Cheese Sandwiches

Ingredients:

2 cups shredded chicken
12 slices sourdough bread, ½ inch thick
½ cup each of White Cheddar cheese, Monterey Jack cheese, Parmesan cheese
3 eggs
1 ¾ cup milk
¼ cup onion, minced
2 tsp. Dijon mustard
½ tsp. cumin
½ tsp. chili powder
1 tsp. kosher salt
pinch of black pepper
2 tsp. chopped Parsley

Directions:

Trim crusts from bread. Place 6 slices in 9x9 pan baking pan. Mix cheddar and Monterey jack cheeses and sprinkle half on bread. Place chicken, other half of cheese, then 6 slices of bread to form a sandwich. Beat eggs with remaining ingredients and pour into pan. Pour over bread and bake at 350º for 30 minutes uncovered, or until slightly golden brown. Take out of the oven and sprinkle Parmesan on top. Place back in the oven until golden brown and crispy, 10-12 minutes.



Grilled Chicken Pasta Salad

Ingredients:

1 lb. boneless, skinless chicken pieces
¾ cup olive oil
2 garlic cloves, minced
2 tsp. kosher salt
1 tsp. black pepper
¾ lb. bowtie pasta
¾ cup Feta cheese, crumbled
½ cup green olives, chopped
½ cup sun-dried tomatoes, chopped
1/3 cup basil, chopped
1 Tbsp. Lemon zest

Directions:

In a plastic bag, combine chicken, olive oil, garlic, salt, and pepper. Shake to combine and let marinate 30-45 minutes. Heat the grill, or grill plate on your stove top. Cook chicken on each side for 5-7 minutes, depending on size. Cook pasta according to package directions, and drain completely. Chop chicken into bite size pieces. Combine chicken, pasta, remaining ingredients, and toss together.

This is an excellent cookbook written in a straight forward style that is easy to follow and has excellent recipes. It's Just Dinner, Not Disaster has 36 recipes that cover soups, salads, entrees and sides that are both tasty and easy to make. None of the recipes call for unusual or hard to find ingredients and with the low price point is a steal.
The author is a very young chef who has won several awards and after going through this book it is easy to see why. I look forward to his next book.

Bravo Chef Jonathan Lynch!!! This book is exactly what I've been looking for! I love good food, but don't really consider myself talented in the kitchen. Chef Jonathan has changed all that! He offers 36 mouth-watering recipes that are easy follow and use ingredients that are readily available. I couldn't ask for anything more. Very well done! And all this for $2.99! What a steal!

Not only has John put together some amazingly tantalizing recipes in this book, but he has also created an entertaining book to read. All of the ingredients are easy to find at the store and cheap. Nothing in this cookbook is hard to cook, but the finished product makes you look like the king of the kitchen, and that is what is so great about it! If you have been intimidated of cooking in the past, this is a great book to welcome you back into the kitchen.

At less than 3 bucks, this is an amazing value. It's totally worth it!
