A "Real" Cooking Torch,

I have been disappointed with other cooking torches that I have purchased. They simply did not provide a flame of the proper intensity for cooking and serveral were not easy to control. I saw a chef using an Iwatani Gas Torch on a televised cooking show and I figured that if a chef uses it, that it would probably work of me. The Iwatani Gas Torch exceeded my expectations. I use the Iwatani Gas Torch often. It is especially useful finishing the surface of meat cooked sous vide or on my BBQ. I especially like being able to start and stop the Iwatani Gas Torch at will. This saves on fuel and if you turn it off, you can easily re-start it if needed. The Iwatani Gas Torch is, in my opinion, a professional grade product and like many professional grade products, it needs to be used with caution. The flame end will be hot even after a short use, so be sure to place the torch somewhere where the torch can cool to a safe temperature. The fuel canisters are available low cost in some cooking stores and the fuel canisters are available in most resturant supply stores. Because of the nature cost of shipping fuel canisters (which increases the cost), purchasing fuel canisters by mail order may not be your best option, unless you order in quantity.

I looked for this item for a while and then decided on the top of the line. Glad I did! Works well to sear fresh fish such as tuna, sea bass and even creme brulee... Canisters are about $1.50 at your corner Asian market.
