Product Description

Product Description

Keep your knives sharp and ready for daily kitchen tasks with this handy sharpening steel. A comfortable, ergonomic handle and long, 9" steel make sharpening your knives quick and easy

Amazon.com

A classic tool that helps get the best from knives, this sharpening steel is a solidly crafted addition to any knife block. Between professional sharpenings, tiny metal fibers bend down on a blade, dulling the surface. The purpose of the sharpening steel is to straighten up those fibers, maintaining the sharpest edge possible for daily use. This model is lightweight, with a flared handle and a tapered edge. It's extremely comfortable and well balanced for experienced users, but beginners may have an easier time with a more substantial weight. Just wipe it down as necessary--there's no need to give this tool a serious scrub. --Jill Lightner

This steel is very nice for the price. The length is fine for nearly any knife and the material itself is of a suitable hardness for correcting cutting edges. The handle is easy to hold, and it has a nice heft and balance. Exactly what I would expect from a Henckels product.

Now, a brief clarification: A steel will absolutely not "sharpen" your knife. It doesn't have a grit so much as the steel used is much harder than the knife. (If you have a dull edge you can run it along the finest steel for hours and not get a sharper cutting edge.) What it does do is simply correct the angle of the knife's edge that tends to get bent to either side during normal use. When you run the leading edge of the knife down the steel in the correct manner, a sharp edge should go back to the appropriate angle. If you have a dull blade, you need to hone a new edge. (For that you may consider using a professional sharpening service. this can be a little tough for a novice...sorry!) Once that is done, use your steel each and every time you pull your knives from their home to keep the edge at peak usability.

Keep in mind that you could sharpen a spoon to a razors edge, it just won't keep it for long. Better knives hold an edge for much longer due to the quality of the materials and their hardness. Few of us need an exquisitely expensive set of knives. Just buy a nice set for a good price and keep on using a good steel!

I really like the handle and length of the steel. It is easy to use and does its job well. The sad thing is that because of the shape of these steels it does not hang from my magnetic knife bar. Please note, this tool does NOT sharpen the steel on your knives. No honing tool does, that is not what these are made for. They instead realign the edge of your knife so that it cuts better. So it is a great thing to have to keep your knives in good care, but it will not sharpen your knives. You should have both tools, a tool to hone (this one) and a good tool or service to get your knives sharpened. The practice I go by is that you need to get your knives sharpened only about once a year, but you should be honing your knives about once a week at the minimum (once for each use is best)

It only takes a few minutes to hone your knives. How I do it is that I hold my knife in my dominant hand and the honing steel in my other hand. Both facing directly away from my body. I slice the knife along the steel as if I am trying to get a very very thin slice of steel off the rod. I do it 5 times on one side and then just cross my hands and do 5 times on the other side. Then I go back and do 4 slices on the first side and 4 slices on the other side. Then I do the same thing over and over again each time doing one less slice. It takes about a minute per knife and can be a bit fun actually.

REMINDER: Sharpening steels are of extremely fine grit - use to KEEP the blades sharp... the finishing touch, if you will. To repair a blade with significant damage, you'll need to get a sharpening stone.

All in all, this sharpening steel is as advertised: the Henckels name, solid construction, nice grip.

The sharpening steel will probably last longer than I will.

This is a very nice HONING steel. This does NOT sharpen your knife, it hones it. And this does a great job of it. This has kept my Shun chefs knife in good shape for months now, and I love it. One of the best purchases I've made. If you run your knife over this steel before and after using it, it will keep a nice edge on it for a very long time.

It is what it says it is and is great for putting that finished edge on knives. About 6 or 7 passes on each side keeps my wifes favorite kitchen knife razor keen. Also used it on my pocket knife, cuts through boxes like butter.

This steel is well made, and did a nice job of honing the blades on my knives. Make sure to keep it at about a 20 degree angle to the knife blade, as most knife edges are sharpened at about 20 degrees. Pass the knife along the steel from haft to blade tip. Five or six correct passes (not too hard) are all that's required. You'll see that the very edge of the blade at the cutting surface is a bit shinier than it was before. Rather than the "two arms windmilling" motion that you often see people use with these, hold it against your countertop, handle up. This allows you to keep closer to the the correct angle than if you have both the knife and the steel in motion at the same time. For a knife with an edge in pretty bad shape, you may actually feel rough spots as you pull the knife along the steel. You may want to make a few extra passes with such a knife, if needed, until each pass feels smooth.

I bought this in tandem with the Messermeister 12-inch ceramic sharpener, because my man was starting to grouse more and more about how dull the knives were.

As others have pointed out, a steel is not truly for sharpening, it is for HONING (straightening the blade) and the ceramic is for actually making the edge sharper. Buy both if you have neither.
He has owned steels before, but pronounced this one effective and of good quality. Very happy!

Works great! replaces my diamond dust one that does not work good anymore.
Going back to a steel was like night and day.
