This book is a brilliant example of what a specialty cookbook should be. The text is written in a conversational tone, and yet delivers information that could take one years to learn in practice.

This book is a brilliant example of what a specialty cookbook should be. The text is written in a conversational tone, and yet delivers information that could take one years to learn in practice.

The recipes I've tried have been fantastic, the ones I haven't...well, it's only because there's only so much chocolate one can eat and still fit through the door. ;)

I borrowed this from the library, and within a day or two of reviewing and testing a couple of recipes, I knew that I would have to make space on my cookbook shelves to have this one as a permanent star in the dessert section.

I have a daughter and a son, who are both professioal chefs. They both requested this book for their birthdays this year. BOTH said they can look up a recipe on the internet, but are never sure it's really going to be exactly what they need. With this book and Jacques Torres' chocolatier reputation, they both said they felt safe using his recipes the first time out.

I love this book, and Jacques Torres's chocolate creations. He knows and feels chocolate like no one else. The recipes are sophisticated, with simple clear instructions, yet fairly forgiving if you happen to make a mistake.

Jacques Torres is a creative perfectionist! Excellent book. I'd love to purchase his chocolate for baking, but sadly, for me the postage and handling costs are exhorbitant.

Jacques has done it again. Tasteful recipes and wonderful information shared about each chocolate treat. He has been labeled a master for many years, but now I would say he has reached the levels of ICON.

Thank you, Chef, for sharing your life and recipes with us. Now the rest of the world can enjoy what has made so many around the world happy for so many years. Sure, the artistic appeal may not be the same, but a little taste is better than none at all.

I LOVE this book Easy to use and soo good
I have to pay $12. for a mix by him at the store which is good to have on hand BUT this works all the time and twice and the book is paid for! Love it

I ordered three boxes of chocolates for my sweetheart. The order cost nearly [...] which included [...] for 2nd day shipping. I recieved the chocolates promptly within two days of placing the order. When my girlfriend opened the box the contents were scrambled around inside the box. A couple of chocolates were broken (something you wouldn't expect for a truffle which has a soft center). This was my first alert that something was wrong. Biting into the chocolate the truffle was stiff, flavorless and had a moldy taste. This isn't the worst of it. I promptly called Mr. Chocolates (the Jacques Torres Website) and explained my dissatisfaction with the order I've recieved. Stephanie, at the phone number I called, said I need to send an email explaining my dissatifisfaction with the order. She said she would check with her superiors and let me know what they are going to do about it. I never got a response to my email so I sent a follow up email two days later. Her response at that time was that she still didn't know what they can do about replacing my order but that she would notify me when they decide what to do. Well now it's been a week and still no response. I'm extremely dissapointed with the lack of their customer response, the quality of the chocolates and their inability to promptly handle my complaint. Truly not worth ordering chocolates from Jacque Torres! Don't waste your time or money on these guys. BTW I wouldn't even give them one star except I wasn't able to post a review unless I gave them at least one.
