McNair's Soups Stoop to Conquer,

If I had to have only one cookbook (perish the thought!), it would be this one. I LOVE soup, and James McNair's recipes are absolutely wonderful and work every time. Don't be fooled by the sumptuous photos of these soups into thinking you have to have a degree from a culinary institute to pull them off. Most of the recipes are very easy to make, especially since McNair finds canned stock as acceptable as homemade stock. In addition, substitutions work very well. I frequently substitute the easier-to-get spinach for sorrel in the potato-leek-sorrel soup recipe. Buy this book today and be prepared for lavish praise from all your dinner guests on the wonderful soups you serve.

I have owned this book since it originally came out... but it was in paperback form and pages kept falling out, bad glue on the paperback version, so I purchased a hard bound edition. The recipes are wonderful, especially the cauliflower cheese creamed soup. It is to die for good. It does take quite a bit of time to prep all the vegetables but it is so worth it that I will never be without this recipe in my repertoire. It is rich and delicious, not something one would want every week perhaps, but so good it is like a treat to eat. The recipes are straightforward and the book is easy to cook from. The Cream Of Anything Soup is also so versatile that it is a winner, too. Actually, they are all good. Buy this book if you love soups and don't mind a bit of time in the kitchen. It is pure comfort.
