As food and wine editor of Town & Country, Villas (American Taste) has learned that "the rich and successful love and respect a great hamburger as much as an elaborate fish baked in puff pastry." To accommodate these cosmopolitan tastes, he has assembled recipes ranging from peanut butter sandwiches to quail stuffed with spicy oysters, from baked beans to fiddlehead ferns with mushrooms. But the most ordinary dishes have the Town & Country touch: the peanut butter sandwich is finished with overlapping slices of peeled kiwi fruit, and the baked beans, eschewing any trace of tomato, contain clove-studded onion, dry mustard and dark rum; to vichyssoise, Villas adds cucumbers, and ordinary rump roast must be basted with three bottles of imported ale. More About the Author

I was born and bred in the South, have 3 university degrees in language and literature (Fulbright scholar), and taught in 3 universities before changing careers and becoming Food and Wine Editor of TOWN and COUNTRY (1972-1999). I've published 15 cookbooks and 4 literary books on gastronomy. My first novel, DANCING IN THE LOW COUNTRY, was published in 2008; my second, HUNGRY FOR HAPPINESS, in 2010; and I'm currently working on a dog novel titled THE BEAGLE PLAYS BRAHMS. My cookbook, PIG: KING OF THE SOUTHERN TABLE, won the James Beard Award for 2010, and my newest one, SOUTHERN FRIED, will be published in 2013. I live in East Hampton, Long Island, where I devote my time to writing cookbooks and fiction and pursuing my love of great music.

I purchased this cookbook about 15 years ago off a sale table. It has turned out to be a classic and 'must read' in my cookbook collection. Many of the recipes that seemed exotic 15 years ago are now staples for the avid cook. It is well organized and contains cross cultural recipes that are timeless. I also love James' comentary for each recipe citing background information and menu tips. A must have. If you find one of these books, buy it!

I enjoy collecting older, vintage and retro cookbooks and this collection from 1985 is filled with wonderful and imaginative recipes, many of them groundbreaking for the time. I would recommend this most highly to anyone who likes to cook and entertain.

This is my third copy over 20 years. They get lost or people don't return it, but I must have one so four bucks on Amazon is an easy fix. Book was in very good condition...
