I was looking in Kapabashi district in Tokyo (the famous kitchenware shopping area where you get 170 specializes shops) for a steel Mandolin. They told me that even the best restaurants uses Benriner Slicer. I bought one. Amazing abilities and precision steel work. You can take the cutting knife out and re-sharpen it (only with Japanese whet stone please). It may last forever.
They have several sizes. Don't the narrow one only the wide. The narrow one must be much less confortable (and may danger your fingers).

This is the best product ever and one of the few that I give as wedding gifts. Everyone should have one of these in their kitchen (maybe even with their camping gear). It's easy to use but, be careful it's SHARP! I've had mine for almost 10 years. I'm getting a new one because it's finally getting dull. The slicer is not very easy to sharpen because the main blade cannot be removed. However, you will absolutely not be disappointed with this product. I also have the Benriner Spiral Slicer, it's amazing for making spaghetti like strands of vegetables and fruits.

This is a very simple but functional mandolin slicer. It is EXTREMELY sharp which makes it easy to use but watch your fingers and ALWAYS use the guard provided. This tool is a must have for any well equipped kitchen. You can quickly slice at different thicknesses or add one of three bladss to shred into different width pieces for french fries, hash browns, cole slaw, salad toppings, etc. Use the thinnest width to create decorative accents for sushi, salads, or other dishes. Blades remove for easy cleaning. Best price-performance and value for an effective and useful tool.

Watch your fingers and you'll be fine. Any smart kitchen guru will love this- it makes quick work out of otherwise tedious cutting. I use it for making raw food creations, such as zucchini pasta, and Paper thin beet slices and so on. The bomb!!

I use this constantly at work and love it, but be careful as you can easily cut your self if you are not paying attention!! the guard works with big items but not so well with smaller items. none the less it is great!!

I've had my Benriner slicer for a few years now and I use it all the time! You will be amazed at how quickly you can prep food with it.
Mine did no come with a tray, but you can work over a plate, bowl or cutting board.
The blades are extremely sharp so handle with care!
This is a quality item and will last for many years, but you may have to replace the blades sooner.
Very satisfied with this product.

I bought this slicer hoping to be able to cut potatoes really thin for deep frying. Boy, was I impressed with how thin and how quickly I could slice potatoes. It used to take me 20 minutes to slice them. Now, it takes 5 minutes! Be careful, though. It is VERY sharp. You won't be disappointed if you purchase this item. I should have done it long ago!

If you do more in the kitchen than boil water and make toast then this will probably be a good investment. It's a nice "beginner's mandoline" in that it doesn't have as many bells and whistles as some like a stand or a basket underneath but it does come with interchangeable blades that make julienne slices and two other widths of cuts. It of course makes the varying thicknesses of slices by adjusting the knobs.

I have owned one for about 10 years and in pretty regular use the blade has remained sharp - RAZOR sharp in the beginning, but still serviceably sharp after all these years. My son has this one now and I've moved onto an even simpler model since I am mostly cooking for one, plus I know pretty much exactly what I need my mandoline to do - i.e. not really needing to julienne stuff as much these days :)

One word of advice is to consider what type of vegetables you'll be using this with; it comes in a larger size with a wider width and I never realized how much I prefer a wider width until I switched to that different model recently.
