It is also known as tamagoyakiki. In Japanese cuisine rolled omelettes are made as rectangular thin omelettes and then rolled into a cylindrical or elongated cube shape using Japanese kitchen chopsticks. To obtain a roll with a constant diameter over the entire lengths, the thin omelette should be of rectangular shape. To obtain this shape a special rectangular frying pan is used.

This tamago pan is simply wonderful. It heats evenly (unlike the last tamago pan I purchased) and is sturdy enough to withstand many uses. I was initially skeptical about this pan; the bottom of the pan is ridged, and I worried that the egg would stick to it. After a few uses, though, I realized that as long as I properly greased the pan, the tamago turned out perfectly every time. All in all, I'm very pleased with this purchase and would definitely recommend it to others.

UPDATE
I've been using this pan for over a year now, and it's still in near-perfect condition. Easy to use and clean, I really can't say enough about how good this pan is. I'm a little baffled by the negative reviews in that in the 35+ times I've used this pan, I've never had tamago stick to this pan. Just grease it properly and it will not fail (incidentally, I've found that a cooking spray, like Pam, actually works better than vegetable oil or Crisco).

I bought this pan and at first I thought that it was my technique. The ridges make it almost impossible to roll the omlette. I just made six omlettes and got it to work by pouring half of the egg (3eggs) in the pan and only doing two layers. Three layers are nice and light. I will have to buy another one and use this one for grilled cheese.

This pan's ridges are horrible. Even if I put a ton of oil in the pan the egg still sticks. I've never been able to make a decent omelette. I HATE this pan. I wish I had never bought it.
