I found a weird recipe that uses Cope's Corn. Amazon had the product. It was shipped from the manufacturer who turned out to be a group of very nice people with a very good product.

We've eaten Cope's corn every Christmas and Thanksgiving that I can remember. It's a holiday staple at many a household in Ohio and abroad now :)

5.0 out of 5 stars Can't Be Thanksgiving without Cope's Corn, November 24, 2010
This review is from: John Copes Dried Sweet Corn (Misc.)
This is a Pennsylvania Dutch staple, made in the heart of Amish and Mennonite Country in Rheems, Lancaster County, PA. We are fortunate to live a few miles from the mill where they make it. You have to get it early because many stores run out close to Thanksgiving. The sweet nutty flavor can't be matched by anything I've eaten. We like it soaked in milk overnight, with salt, sugar and butter. Add turkey, mashed potatoes and gravy and it's Thanksgiving, whenever you eat it.
