Part of the Pro Chef Excalibur Series by Joyce Chen, the 14" Flat Bottom Wok Set has the Excalibur reinforced non-stick coating system which has been acclaimed by U.S. retailers, professional chefs, and consumers as the best performing non-stick finish for cookware in today's market and carries a 25 year limited warranty. This wok's professional weight is 2.0 mm of aluminum and carbon steel made for use on gas or electric burners. The Flat Bottom Wok's body is comprised of two layers of aluminum surrounding a carbon-steel core for rapid, even heating and cooling ¿ a must for any stir-fry. The Flat Bottom Wok Set includes; non stick wok and aluminum dome lid. This series features stay cool phenolic handles and the Excalibur non-stick finish is tough enough for metal tools. Joyce Chen opened her first restaurant in Cambridge, Massachusetts in 1958. The restaurant flourished, and in 1973 a larger Cambridge restaurant was opened. Chen also began writing Chinese cookbooks and in the 1970s began hosting a cooking show on public television. She found that the selection and quality of Chinese cookware in America didn't live up to her high standards¿ so she developed her own. this is by far the best wok i've ever used. comparing with other wok, this is heavier (the only setback i can think of) but sturdy and solid. the wok heats up rapidly and food cooked very evenly and fast. if you do alot of stirred fry then this wok should be considered. for serious cook only.

This is my second Excaliber surface wok. The non-stick surface in the original pan wore out after 14 years. I think it was only rated for 10 years. The warranty for the new pan surface is 25 years, so I should get good use from this pan! I like being able to use metal utensils on the surface even though I primarily use plastic spatulas.

This wok is very heavy and well made---it is very even in it's heating and cooking and is very versatile and cleans up easily---I highly recommend it!
