The Joyce Chen's Dumplings Plus Press is a handy kitchen tool that is a favorite with the at home Asian chef and helps you make perfectly formed dumplings or pot stickers. The press features two handles and the hinged center allows you to place dough or wrapper in middle, fill and then fold press in half. I use this press to make pot stickers for my son all the time. It works perfectly and quickly. I always use the wonton wrappers from the local grocery, but it would work well on homemade wrappers as well. I would highly recommend it especially if you combine this technology along with the recipe from America's Test Kitchen or Ming Sai's.

This is a great dumpling maker. It is easy to use and very easy to clean. If you need to make a bunch of Gyoza in a hurry, this is the ticket. Even sticky doughs are a breeze with either a dusting of flour or cornstarch, or a spray of oil. Both work well depending on your needs at the time. If you are using packaged gyoza wraps or wontons, no treatments are necessary. The crimp this maker provides is excellent, so your dumplings seal well the first time. I saved the price of this dumpling press the first time I used it. For so little money, one can make so much. Highly recommended.

Got ourselves this press about 6 months ago, have used it a half dozen times, and was so much happier with how much faster dumpling-making goes compared to hand-folding them that I recently got one for a relative as a present. They used it once and texted to say they'll be making more dumplings now! Yes, it does require you not to over-stuff the dumplings (so?). I also will say I tend to put this on the table and press down on the half-circle edge to crimp them, not on the handles, so I guess it wouldn't surprise me if the handles would break off eventually from the stress if you pressed on them each time. But the thing would still be usable anyway.

Pricewise, these are available at our local international grocer for about $3.50, so I wouldn't pay more than that to buy it here unless you have no such store near you. (And if you do have a store near you, the frozen wonton wrappers are also a good buy at about $1.50 for 50! Who needs to make their own?)

A great little product. Does the job in half the time, and with little to no mess. I recommend this product. I've used it making dumplings and pierogi's. I'm a regular Martha Stewart with this contraption! For a crowd, I prefer the "Kuchenprofi" dumpling maker. Both products are dishwasher safe and fold nicely for storage.
