I like high quality knives, and I already have a complete set of Henkels, so it was hard for me to justify getting a knife just to cut sushi rolls. But, I wanted to try using a traditional Japanese knife that is ground on only one side as this one is. Note that this one is ground for right-hand use, though I'm fairly certain it will still cut just as well when used...

I am not a chef. I am not even a very avid cook. I am just a 30 year old male, and I bought this knife when I was going through my "I ll cook my own sushi at home" phase, last year. I was not impressed by it. It looks nice, but that's almost all that it is worth mentioning.

But it does cut, so I guess that makes it a good knife. I would probably not buy...

I like high quality knives, and I already have a complete set of Henkels, so it was hard for me to justify getting a knife just to cut sushi rolls. But, I wanted to try using a traditional Japanese knife that is ground on only one side as this one is. Note that this one is ground for right-hand use, though I'm fairly certain it will still cut just as well when used left-handed.

It is great for lopping off the little sushi roll ends and turning them into bite-sized snacks without squishing the roll. Fun stuff!

It cannot be run through the dishwasher, but is easy to clean by hand.

The handle is called "ho wood" and it took quite a bit of research to find out what this is. Turns out it is the dried wood of a Japanese Cyprus, and has natural oils in it with antibacterial properties. Makes sense that it is traditionally used with sushi knives given the importance of cleanliness when dealing with uncooked foods.

This is a much better quality knife than the price would suggest. To get better than this will require at least four to five times the money, which for me was not worth it given that it is essentially a single-tasker. You can use it for other things, of course, but mostly it is just to cleanly cut the rolls.

This knife is better than even anticipated. It is well worth the money. The cut it creates is very clean and smooth. Would definately recommend! Especially for the price, it is a great knife. I have seen them much more expensive, but this one works just as great. I wish it came in a better case than the piece of cardboard it came in, but it will do.

Didn't have great expectation since the price range for Sushi knives is pretty wide. For a novice sushi maker like me, this is plenty good. The blade is well-crafted and the bamboo handle is nice. It would have been nice to have a scabbard for it but I just replaced one of the rarely-used knives in my knife block.

Price to quality ratio is exellent.It is not the top knife but if you are not professional cook you probably won't need much better then this well made knife

The knife looks as described. The knife blade is extremely dull and did not sharpen with a quality stone. The knife may be adequate to cut butter but certainly unable to cut any food product with more substance. The knife did not meet any expectations and should be avoided. The knife was a total waste of money.

Joyce Chen's Sushi knife works well for me. It has both length and sharpness that performs well in slicing sushi rolls and raw fish, I would not hesitate to buy another for myself or as a gift to an aspiring sushi chef..

This knife is ok for the price. It is made in China so that tells you something right away. It is much larger than you might think based on the pictures. I would not purchase from this seller again because it took weeks longer to arrive than was promised and I was charged $6.00 shipping when the label from the post office clearly says $0.85. There are definintely better options.

I ordered this knife on December 7 for a Christmas gift for my son. It finally arrived on December 28. At that time, we were away and visiting my son without giving him his present. I ended up having to ship it to him. I am totally disgusted. I wrote to the company and was told it was a shipping issue, not their fault and they refused to send another one. So, no thanks Joyce Chen.
