Used every day!,
By
This review is from: Joyce Chen J22-0030 Pro Chef 12 Inch Peking Pan with Excalibur Non-stick coating (Kitchen)
I bought this pan about 6 years ago. I have used it almost every day making stir fry, soup, spaghetti, sauces, searing meat, EVERYTHING! It heats up fast, and the non-stick surface is almost indestructable. It's the perfect size for doing just about everything. As for the previous comment about the weight, it's 2mm steel alloy. It's actually lighter then most of the cast iron wok's I've used. And if cleaned immediately after every use, I've never had a problem with the non-stick surface. This is a fantastic pan!

Definately a great finish to the product: but not quite deep enough,

Almost a five star. The finish of the wok is truely high class, compared with a lot of the 'non'stick' varieties out there. We have been looking for a decent non-stick wok for almost a year: hunting from william sonoma, china town, crate and barrel and web sites. why this amount of passion? we love cooking with a wok, but our recent wok, a non-stick, and despite the seasoning - it just did not work. With a lot of claims on the non-stick material peeling off and the danger it poses to our health. We finally buckled as the cleaning and the sticking on the non-stick wok was just taking the enjoyment out of cooking. I think you have to bash this wok around before feeling happens. We think the non stick finish is a lot better than the All Clad brand, which we noticed had started to peel a few applications.
After a couple of heavy duty sessions with our wok, including a dinner party of 6, we love it. the only grip is that we wish it could be 2 inches deeper, as per traditional wok. hence you can toss and stir fry like in a traditional wok, but we are living with it as it as the food is not sticking/burning and the cleaning is a dream. Note that there is a 25 years warranty on this product so scan a copy of this invoice, note down the address that is attached to the wok and save it in your email box! If it serves me for 25 years, I think I certainly got my return on the cost! The 12 inch is not that wide, and I would highly recommend for a family of two to a party up to 8.

The Best Pan Ever,

I have used this wok for over two years. I love it! I use it for everything, from frying eggs to frying pork chops! I used my first one so much that I wore it out. The non stick coating started to wear. I am on my second pan and I love at much at the first. It is so easy to use and to clean. You will really enjoy this one, it is worth every penny!

I have had this pan for several months and find myself reaching for it for just about everything. It is not only a wok, but the most versatile skillet I own. The food heats throughout and it is a breeze to clean.

Does Not Last Very Long,

Not recommended. I bought the 12-inch Joyce Chen Peking Pan just over a year ago, and was initially pleased with its performance for stir-frying smaller amounts of food and easy clean-up. However, after about 6 months of use, the non-stick coating began to degrade. At first, I noticed that the there were little "bubbles" in the coating. Then the bubbles in the non-stick coating disintegrated, and the bottom of the pan became pitted where it is in direct contact with the heating element on the stove. Great...bits of non-stick coating in my food! I used non-scratch wooden and plastic utensils at all times, so my conclusion is that some quality control is lacking here. For the price paid, I expected this pan to last a lot longer than 6 months.

I bought this wok only a few months ago and have used it maybe 5-6 times. Used it last night and the plastic handle broke into pieces, making it unusable. Stay away from the plastic-handled variety.

We bought this wok 1 year ago. Recently, it became very sticky with normal use. So we tried to return it for warranty since it has 25 year of warranties. It turns out its warranty return address is bogus. The address listed is Joyce Chen Products, Customer Services, 6 Fortune Drive, Billerica, MA 01821. It doesn't accept warranty returns.Avoid this product!! Not worth the money for such a poor quality product and NO CUSTOMER SERVICES.

I bought this for the firehouse but I bought another one for my house a smaller size though. This is a 12"and wow the pan feels solid but light enough to run back and forth for stiring rice and other foods like vegetables in a stir fry.
I don't use metal even though it says its tough enough but the non-stick surface is almost Spackle but nothing sticks to it. NOTHING. USE: cook for firefighters at firehouse about 4-6 times a week. The handle is solid the hook allows you to hang it, the bottom is flat so I use it on a electric stove NO PROBLEM cooking up fast, holding heat and evenly cooking all. I just don't see a use for a lid even though one is available. I use this pan and feel 100% confident whatever I make it in. I don't regret buying this and the smaller one for my house is say EVERYONE should have this Wok

The reason why I bought this pan is because I tried the new fangled ceramic pans
and they didn't last long. I've had this a month. This is the absolute best all around pan, I've ever owned. The bottom is flat so I can make a perfect Omelette. The sides are high(It's a Wok) But with the flat bottom it operates like a normal pan too. It's great for cooking for just 1 or for a family of 4. The non-stick is good but not perfect. I don't use oil and do see some sticking If you clean it immediately it's a breeze. Leave the stuff on there hours and it's a little tougher, but It's never been a chore to clean it. The texture of the surface is a little rougher and this gives the ability to brown and sear food, but I think this grainy texture is why it's not 100% non-stick. For me it's a fine trade off. The pan heats evenly. One intangible. This pan has steel underneath the excalibur coating. I've read some literature that Aluminum may cause Alzheimers and other bad health effects. So if by any chance the coating wears away you won't be adding aluminum to your diet and that's important to me. If you were to use just one pan in the kitchen and nothing else whether single or for a family this fits the bill.

My wife wanted a good wok for making Chinese food. It's nice and heavy, and the price at the local places we found it were far higher than here on Amazon.
