5.0 out of 5 stars Joyce Chen 14 inch flat bottom non-stick wok
This wok is by far the best one I have ever had. I use it at home and to cook at the Patriots' tailgate over an 80,000 BTU propane burner. I have never had a problem with the non-stick coating as long as I use wooden or bamboo tools and don't let the wok heat dry. You'd have to be an idiot (or a Jets or Colts fan) to put the wok on high heat empty or to use metal tools...

1.0 out of 5 stars Nonstick surface disintegrate
The nonstick surface of this pan started to peel off into our food, kind of like peeling paint, within a couple of months of purchase. Definitely do not buy this pan. I've had lots of pans with non-stick surfaces and I've never seen anything like this. It made an otherwise nice sized pan, with good weight, unusable.

Avoid this product. The handle broke within a month of use which is exactly outside of the time window Amazon allows the item to be returned when you added the delivery time from the order date. Save your money and I would avoid buying cooking products from this site.

Get one or two of these...you'll love 'em.

5.0 out of 5 stars I've got two - and I love 'em, April 25, 2010

First, always use a bamboo or wooden utensil. Anything else will mess up the finish over time.

I bought my first back in 1993. I used it for years. It's heavy, heats evenly, and holds the heat well. After several years or so it was a little worn. This one now is used for water based and steam preparations.

I bought a second one in 2001. This one is in great shape still. I use it for high heat, oil based preparations, and for reductions.

I love them. Surprisingly they work nearly as well on electric ranges as gas ranges - and normal woks are worthless on electric ranges. The only downside on an electric range is the heat stays more concentrated in the center.

The only complaint I've heard from others using them in my kitchen is, they are heavy. And they are - but they wouldn't work as well as they do if they were not heavy. And I can handle heavy.

I was looking for an all-around pan that can cook meat as well as vegetables. I am a Wok fan but don't like messing with the rings. This pan with it's flat bottom is very stable, even on my gas stove. Heats up quick and performs very well. It says you can use metal utensils with it but I am afraid. I'll continue to use wood and plastic and see how the Excalibur non-stick holds up. For the money, I don't think you can do any better!

4.0 out of 5 stars Great Wok!, August 17, 2011
This review is from: Joyce Chen J22-0040 Pro Chef 14 Inch Flat Bottom Wok with Excalibur Non-stick coating (Kitchen)
I purchased this wok a few years ago from my local market and I love it!

I use it quite often since I love making asian food. I have never had a problem with the nonstick coating (and my wok gets used A LOT!) I love how quickly it heats up and how cool the handles stay. I do always use bamboo wooden utensils, so as to not damage the nonstick coating and ALWAYS wash by hand.

A definite must buy! :)
