When A&J's Lasagna Chips' founder, nutritionist and nurse Elaine Katz, received a call from school nurses that her 5-year-old Jared was hyperactive, it was cause for great distress. At the time, some 30 years ago, the term ADD wasnt loosely thrown around as a common explanation for childrens excited behavior. "It was a big stigma then," Elaine said. Elaine explored natural diets as a means to help her son. Not wanting to take the easy way out through medicine, she sought the help of Dr. Feingold, inventor of the Feingold Diet, which calls for no artificial preservatives or additives in food products. She soon discovered that preservatives such as BHA and BHT found in most snacks would cause her son to bounce off the wall.
All-natural supermarkets were non-existent at the time, so finding all-natural snacks was a challenge. This prompted Elaine to create her own snack--a chip made from fresh sheets of lasagna. Using unbleached semolina flour, specially seasoned and cooked, she produced the only all-natural pasta chip with no artificial ingredients, no cholesterol, and 50% less fat than other leading snack chips. Despite the healthy ingredients, this snack became a huge hit among Jareds classmates, selling for 10 cents a chip at bake sales and becoming the most popular snack at friends parties. Parents loved this new snack, too.
In the early '90s, while living on Long Island, Elaine tried turning her invention into a business. She began making samples out of her garage and received positive response from people tasting it. But, the demands of motherhood proved to be too great to juggle a business as well. It was her now-adult son Jared who recently turned his mothers old venture into a reality.
