Book Description

Pbs Series February 4, 1998
Easy to Cook, Easy to Eat.

That is Justin Wilson's philosophy in Justin Wilson's Easy Cookin', a brand-new collection of more than 165 delecticious recipes that are a snap to make. You don't have to look any farther than your supermarket for the makings of a great meal, no matter what you've got a hankering for. For breakfast try Lost Bread (called that because you make it from bread that's gone stale), which is fried up golden like French toast, or a comforting bowl of Pecan grits. If you're having a party (and if you're not, why aren't you?), Justin's got plenty of recipes to keep hunger at bay till the main course arrives -- Pickled Eggs, Oyster Pate, and Shrimp Dip, just to name of few. Planning a picnic? Plenty to choose from here -- Hot Cabbage Slaw, Country Egg Salad, Picnic Potato Salad, Potato Salad Without Potatoes (you'll have to read the recipe to find out how Justin does it!). Then there are hearty soups and stews to warm you up on raw days -- Oyster Soup, Turtle Stew, Red Bean Soup, Leftover Steak, Potatoes, and Mushroom Stew.

Now let's get to the main event. Louisianians love their fish and shellfish, and Justin doesn't disappoint with Oyster-Eggplant Jambalaya, Crabmeat Etouffe, Crawfish Maque Chou, and Boiled Shrimp in the Shell and a 6-pack of Beer. More in the mood for turf than surf? Take your pick of Chicken casserole with Wild Rice, Barbecued Brisket, Hominy and Chili Casserole, Fresh Pork and Sausage Jambalaya a la Party, and Rabbit Gumbo.

Rice and beans are a Louisiana staple, and Justin's got more than a few -- Dilly Cheese Rice, Pepper-Mushroom Rice, and Red Beans and Rice Casserole. And don't forget your vegetables: Try Potato Pound Cakes, Green Onion Grits, Okra and Crawfish, and Pork Backbone and Turnips

And just when you're ready to push back from the table, there's dessert. Choose from seven different kinds of cobblers, Strawberry Pie, Walnut Pie, Bread Pudding, and Brown Rice Pudding.

Good living is about good eating with friends and family, and Justin Wilson's Easy Cookin' just made it a whole lot easier. I garontee!

Editorial Reviews

From the Author

"Dis is so easy to cook and it tastes so good, you are going to think somebody lied to you about how good it is, I garontee." --Justin Wilson --This text refers to an alternate Hardcover edition.

From the Inside Flap

Easy to cook, easy to eat. That is Justin Wilson's philosophy. Sitting at the table instead of standing in the kitchen during a meal is every cook's goal, and with these dishes, even serious chefs will be spending more time with friends and family, garonteed! For parties, picnics, or everyday occasions, Wilson includes Hot Cabbage Slaw, Country Egg Salad, and Potato Salad without Potatoes. Each recipe yields between eight and twenty servings, enough to feed your family and all your neighbors. Hearty soups and stews for brisk weather, such as Turtle Stew, Red Bean Soup, and Oyster Soup, will warm your insides and keep people coming back for seconds. For barbecuers, Wilson takes you out of the kitchen to use a Cajun smoker and Cajun microwave, great for cooking a pig or turkey in any season. With all the spices used in the main course recipes, it is essential to balance those savory flavors with a touch of sweetness. Wilson rounds out the meal with easy-to-prepare recipes for cobblers, pies, and puddings. Justin Wilson was an internationally acclaimed humorist who hosted six television cooking series and authored eight other books for Pelican: The Justin Wilson Cookbook, The Justin Wilson #2 Cookbook: Cookin' Cajun, The Justin Wilson Gourmet and Gourmand Cookbook, Justin Wilson Looking Back: A Cajun Cookbook, Justin Wilson's Outdoor Cooking with Inside Help, Justin Wilson's Cajun Fables, Justin Wilson's Cajun Humor, and More Cajun Humor. A lifelong resident of Louisiana, Wilson passed away in 2001. --This text refers to an alternate Hardcover edition.

5.0 out of 5 stars Truly living up to its title, April 12, 2010
Louisiana cooking offers one of our country's most distinctive and popular regional cuisines. Perfectly capturing this culinary treasure of mouth-watering dishes, "Justin Wilson's Easy Cookin'" is a 244-page compendium of truly 'kitchen cook friendly' recipes ranging from breakfast to dinner, appetizers to deserts. Of special note is the use of flavored salts and powders, avoiding the time consuming necessity of peeling and chopping onions, celery, and garlic. From an Eggplant Appetizer, to Chicken a la Creole, to a Broccoli and Ham Casserole, to Hominy and Mushrooms, to a Peanut Butter-Blueberry Cobbler, these are gourmet quality, 'down home style', palate pleasing, appetite satisfying dishes that would grace any table for any occasion. Of special note is the chapter dedicated to sauces and featuring two different tartar sauces, three barbecue sauces (including one for diabetics), and basting sauces. Truly living up to its title, "Justin Wilson's Easy Cookin'" will prove to be a welcome and popular addition to personal and community cookbook collections alike!

1.0 out of 5 stars rib tickling, May 24, 2000
By A Customer
This review is from: Justin Wilson's Easy Cookin': 150 Rib-Tickling Recipes for Good Eating (Pbs Series) (Hardcover)
Rib Tickling and Stomach Turning. That should be the title of this book. By far the weakest link in his series of cookbooks. The recipes were bland and the stories old and silly. Not a good buy.
