This Deba knife is the Japanese butcher's knife. Intended for working through thick skin, bone, and heavy work, the deba is truly an all-around useful tool in my kitchen. This is also very nice for fruits and vegetable work. And guess what Kershaw is a subsidiary of the World famous Knife maker SHUN......
Features of the knife are:
8-1/4-inch deba knife for slicing or boning fish, poultry, or vegetables
Traditional Japanese styling with blade sharpened on a single side for superior cutting performance. The single edge is very Easy to sharpen using a sharping stone...
Daido 1K6 high-carbon, stainless steel for superior edge retention
Unique black polypropylene handle impregnated with an antibacterial agent
made in Japan.

This is a extremely great knife very sturdy and durable knife, for those of you who dont know this company is part of shun cutlery. It is just as great it may not have the extra looks like a shun but has all the quality of one.

For the money I'm impressed with the quality, does what it's supposed to do well. This type of knive isn't for all propose cutting. It won't do well for thick hard vegetables or fruits. The blade is pretty thick and back side has a slight convex curve to it which makes it twist while trying to cut through something like a potato. This knife is for fish and poultry and small softer vegetables. Can cut through bones if you chop, just be careful. Watch a video on YouTube about filleting with a debs knife to learn the Japanese style of doing it.
