I am shocked at what I got for the price. I already had the Kai Wasabi Deba, Usuba, and Yanagiba, which I was happy with. But the blade size on the paring knife is *perfect*, it comes absolutely razor sharp, and I have been able to keep it in great condition. I have even been lazy enough (shame, I know!) to put this knife in the dishwasher. A quick run across the honing steel and it's gliding through tomatoes again. I do recommend, however, that you do NOT put this knife in the dishwasher. It is very easy to hand wash. Just use a sponge and be careful along the blade. I've used this to dismantle roasted chickens, cut cheese, slice tomatoes and other veg, and cut sandwiches full of rotisserie chicken into parts. It has met every job without a problem. For the price, you really will be hard pressed to get another paring knife as capable as this. Despite being a "cheap knife" (in every sense of the word) I am very impressed, and I think this knife will offer years of service with a little bit of care.

I have a whole set of Wasabi knives and I can't say enough about them. I also have a whole set of wusthof knives that are collecting dust in the drawer. Made BLT's for lunch today and used fresh tomatoes fresh out of the garden. My Wasabi pairing knife cut through the tomatoes like they were butter, extremely sharp plus they are very easy to keep sharp...I just use a whetstone on them every once in a while. They are handwashed everytime I use one and they stay sharp forever. Got my first one in London and brought it home to Ohio.
They are very light in your hand and they have a good feel. I highly, highly recomend.

I like this knife and have a few other Wasabi series knives. This one had some overgrind on the tip so I take a star for that. It is sharp like all Kai knives. It will take an edge as well a most high end knives but doesn't hold it as well as harder knives. It also doesn't chip as easily as a harder knife.

To clear things up a bit since Kai USA doesn't seem to market their namesake knives very well here in the US, Kai makes Shun. Kai has been in the knife business since 1908. They make Kershaw knives and their kitchen lines include top to bottom ShiHou3 64 (±1) HRC, Shun 61 (±1) HRC or 64 (±1) HRC depending on model, Michel Bras 61 (±1) HRC, Seki Magoroku 61 (±1) HRC, 59 (±1) HRC or 58 (±1) HRC depending on model, Wasabi Black 58 (±1) HRC and Pure Komachi Hardness 53 (±1) HRC.
The Wasabi series uses DSR1K6 steel Carbon 0.6, Silicon 1.00 Manganese 1.00 Chromium 13.5 Molybdenum 0.13 Vanadium 0.13. This is a specialty formulated martensitic knife and scissor steel, it's like X60Cr13 or 440A only with added Vanadium and Molybdenum and lower Phosphorus and Sulphur. It is a fine cutlery steel that can get to about 60HRC. Vanadium is traditionally known for its ability to retard grain growth at elevated temperatures and for its beneficial affinity for carbon and nitrogen. Vanadium promotes fine grain size, increases hardenability and improves wear resistance through the precipitation of its carbides and nitrides. Molybdenum is a potent hardenability agent and is a constituent of many heat treatable alloy steels.

Fit and finish on this knife are very good I have a number of expensive knives that don't look any better. Handle is longer and larger than many paring knives and that is a plus . Better than what I expected for a $24-25 knife (although priced much higher on some sites and under different names of companies owned by Shun knives) . Edge is sharp out of the box too, don't really need to but I probably will hone edge with a 1 micron polishing stone (just a habit) . Haven't been able to determine the exact steel but read a forum where the moderator did test it at Rc56 . While not the hardest steel, probably good enough to hold a reasonable edge for the designed use . My wife likes it too and that's good since I bought it for her . I wouldn't hesitate to buy another for a friend .

This is a 5 star knife for my two big reasons. The price and performance. The ergo's are great on this knife and it is a slicing demon. I am not sure how the steal will hold up against rust. I usually take really good care of my knives, so I probably won't find out. Even if it does rust on my I am sure I will get my money's worth out of it before that ever happens. Oh and as an added bonus, it seems to hold the insanely sharp edge quite well. For the cost of this knife, you can not go wrong by adding this one to your kitchen kinfe collection.

A little disappointed. When I first received the knife and used it, it worked wonderfully. So sharp. After a few uses, however, a VERY few uses (2), the knife edge seemed to be as dull as the back of the knife and without any way of sharpening to the desired 16 degree angle (my fault for this,I should have taken this into account before ordering) my 22 degree sharpening tools did not seem to achieve the same level of sharpness. But the knife seems to be well made and I would enjoy using it if it was sharp enough to cut things.
