Cook's Illustrated magazine recommends this 16-by-14-inch cookie sheet because it browns cookies nicely and evenly and is moderately priced. Nice, even browning comes from the sheet's material, which is tinplated steel that might discolor but won't rust and is scratch resistant. Other virtues include the sheet's big front lip that offers a firm grip and its raised, rounded side-edges that prevent those chocolate-chip cookies or blackberry scones from sliding off. Use this rigid sheet for any baking-sheet need. It will go in the dishwasher, but it's best to hand wash it and scour with a nylon or plastic scrubber. --Fred Brack

I bought the Kaiser on the recommendation of Cook's Illustrated, and for the most part they live up to the hype. They do discolor quickly, and while the discoloration can be removed with Bar Keeper's Friend, it doesn't affect the cooking so I don't bother. The size and feel of the sheet is perfect. Despite what Cook's claimed, they warp in the oven almost as much as the Ekco, but it's never been a problem. I bake a lot of chocolate chip cookies, and these sheets brown them more evenly than any other I've used. While I harbor an extravagant wish to try the All-Clad cookie sheet, really I can't imagine needing a better one than the Kaiser.

We first saw these cookie sheets recommended in Cook's Illustrated and bought them in preparation for a bout of Christmas cookie baking. As usual, Cook's picked a winner. These cookie sheets are sturdy (we've experienced no warping), easy to clean, and stack compactly. Unlike cookies baked on dark, non-stick cookie sheets, the cookies baked on these browned perfectly, top and bottom. They'll likely last us a long time.

I don't know what happened to some of these other people; all I know is that I too bought this cookie sheet because of the recommendation of Cook's Illustrated and I LOVE it. I purchased one for me and one for my mom and we both have had nothing but perfect baking experiences. How could you even go wrong with such a quality pan for about...? I have never once burned cookies with this sheet and neither mine nor my mom's have warped at all (and we have used them many times for almost a year). We both will purchase Kaiser cookie sheets from now on. I actually was here to purchase another one when I read the few unfavorable reviews and felt the need to stick up for my favorite cookie sheet.
