I've owned one of these pans for at least 15 years and it's never failed me so I purchased two more and a couple of other sizes a few years ago and they all work beautifully. I have (had, I pitched them) some of the non-stick, dark pans and the cheesecakes do not come out as well as in the Kaiser tin pans even though I adjust temps and cooking times accordingly. My...

You get what you pay for with this springform pan. I had to open and close the side buckle several times before it closed properly.

Another thing is I don't like the crisscross pattern at the bottom. That's not how a springform pan should look like. You don't see pro bakeware with bottoms like that.

I have (had, I pitched them) some of the non-stick, dark pans and the cheesecakes do not come out as well as in the Kaiser tin pans even though I adjust temps and cooking times accordingly. My cheesecakes have always gotten rave reviews and I credit the Kaiser pans for making it easy to impress. Truly, I have no clue what the issue is with closing these pans. You can't do better as far as I'm concerned. Unless it's a non-coated professional Chicago Metallic classic 9 inch springform pan which I have not been able to find. I don't think they make it.

I ended up giving it away and went for the Daddio's Cheesecake Pan. The bottom is removable. It's a regular cake pan with a removable bottom. That makes sense. It's not worth buying unless you're on a super-duper tight budget.
