Cheesecake Stuffed, Chocolate Covered Strawberries

CHEESECAKE FILLING:

  • 12 to strawberries, hulls removed, centers cut out
  • 6 ounces cream cheese, room temperature
  • 1 teaspoon vanilla
  • 1-2 tablespoons powdered sugar (depending on desired sweetness)

Whip together cream cheese, vanilla, and sugar. Place mixture into a piping bag or ziploc bag with bottom corner cut off. Pipe the mixture into the center of each strawberry. Cover the cheesecake end of the strawberry in chopped almonds or any other topping if desired. Place strawberries on a serving dish, cover, and refrigerate.

CHOCOLATE COATING:

  • 4 ounces bittersweet or milk chocolate, chopped
  • 1 packet (1 tablespoon) Kelapo coconut oil

Melt the chocolate in a small metal bowl set over a pan of simmering water. Stir in the coconut oil and heat until dissolved, about 1 minute.

Keep chocolate luke-warm. Remove strawberries from refrigerator and dip each strawberry in the chocolate mixture. Place strawberries on pan covered with wax paper and refrigerate until chocolate is completely hardened.

I happened to surf on to a site touting the benefits of coconut oil. I purchased a jar of Kelapo Extra Virgin Coconut Oil... Cold pressed. I have been using it daily as a face moisturizer and I am impressed. I am seventy years old and I wish I would have learned this secret long ago. It is so pure and melts on my fingers as I apply it to my face. It soaks right in and feels so good. Over the years I have tried all the known brands of facecream, and this is better than any. Not only are my "wrinkles" looking better, my skin appears brighter. The price is nothing compared to a jar of hyped-up, full of unwanted ingredients, etc. expensive facecream. I feel like I truly have discovered a product, and such a simple one, that is making a differience. Love it and I can cook with it, too!

I apply this topically to my face as a moisturizer and occasional cleanser. I used to have severe acne. Using this oil as a moisturizer is one of many steps I've taken that helps. (I also take the Kelapo Extra Virgin Coconut Oil pills internally.) I used to have a homemade oil blend that I would use as a moisturizer and cleanser, in conjunction with this product, but then I realized that this product on its own was sufficient. After some time applying this product to my whole face, I began applying it to my whole body. It is perfect for razor bumps.

Everything you've heard about oil-free moisturizers is a lie. I've used this product for three years now and it is the only thing I will put on my face. How did I start putting oil on my face after years of "oil-free" face wash commercials? I got to the point where my acne was so bad, I was willing to try anything because I figured "it can't get any worse!"...and clearly, "oil-free" wasn't working. As I used this product, even though I still had pimples, I would get compliments on my complexion. Even with pimples, people would say my skin was glowing. Then, the pimples started to disappear. Dietary changes are a must as well. But this product will satisfy the topical component of your skin-care regimen.

This product can also be used for cooking. It makes for some delicious, healthy french fries.

To use as a cleanser: apply to face, rub it in thoroughly, then lightly splash off with warm water. Lightly, pat the face dry with a clean towel. Do not rub. Then re-apply the oil as a moisturizer.

I hope everyone who uses this product for acne has as much success as I did. After seven years of acne...I love my face!

I've tried a couple different brands of coconut oil at this point and this one is the best. It has the best flavor but is mild enough to use as a substitute for oil in baking recipes. I use it in place of canola oil in pancakes, in place of butter on toast, etc. Absolutely fantastic and love that it is cold-pressed and unrefined!

I highly recommend this brand and product. I buy two. I keep one in the kitchen and have switched all my olive oil to this oil...I keep one in the bathroom and use for a moisturizer for my face, neck, arms. I even use it on my hair. I have read how people are using it for oil pulling for teeth and gums, but I have not been able to convince myself to do that quite yet. ;) In the kitchen, I also put a tablespoon in my morning oatmeal or breakfast smoothie. GREAT product.

What is Amazon doing gift wrapping and selling a misleading product... If it was a third party, they could have used some excuse. Labelling is the only liability producers have so for Kelapo to claim unrefined on their Website but not on the labelling is very questionable. Unrefined means more nutrients and just because virgin, it does not mean it is unrefined unless specified on labelling not claimed anywhere else. It is in a plastic jar not glass jar and sells for more.

I use VCO in the mix for my hair, shaving cream, soap, hand lotion, face lotion, body lotion, tooth paste as well as I make popcorn and consume it straight out of the jar for its nutrients. Years ago, I was able to get raw, hand pressed coconut oils from fresh coconuts from Mexico produced right here in US but due to popularity of VCOs, many producers have been creative in making money by misleading shoppers as well as many misleading reviews by shoppers certainly has hyped the business of VCO to another level. Extra Virgin Coconut Oil is a lie since Extra Virgin applies only to olive oil and infact the VCO market has become so saturated that many producers are removing extra from their labeling and calling it virgin coconut oil, no more extra virgin. In Canada where the best VCOs are produced, it is illegal to even use the term, extra virgin for coconut oil but in US the laws are very relaxed. There is no Extra Virgin coconut oil, only virgin, there is no pure, no #1, no 100%, no premium liquid, or any of those terms used for coconut oils. There is no coconut oil especially produced for beauty product which is any different than for cooking or consumption either as a salad dressing or right out of the jar with a spoon.
