The quality of the procudtion was not good. But the cook was fantastic. But the camera men did not do a nice work. To many picturen without sharpness.

First let me start off by saying this. Ken Sushi Volume 1 is unquestionably the BEST video guide for making sushi. I have had a chance to see the other guides, and quite frankly they just don't cut it. Poor camera work, and even worse instruction should not be found in a sushi instructional video (or any culinary instructional video for that matter). Also, being taught by a sushi enthusiast rather than a professional sushi chef is not going to send a very good message to people who are really serious about learning how to make sushi properly (people want to learn from someone experienced, not enthusiastic).

Finally we have a video that is taught by a professional in the sushi scene, and he really takes the time to lay out all the techniques he's developed over the years, so that with a little practice (and the benefit of not having to take the time Ken did to trial and error his methods of perfect sushi creation) I was actually able to make some really great sushi.

The camera work is GREAT! No shakes or stutters, I didn't find myself distracted by the nuances of poor production quality. Truthfully this video is done so well, you will just find yourself immersed in what Ken is teaching (it plays a LOT like a chef Martin Yan instructional video).

Also it seems a lot of time was taken in pre production to really focus the instruction to a degree that it is thorough enough for someone familiar with sushi creation, yet developed enough so that someone completely new to the sushi experience can actually have a fair shot to making a wholesome, delicious dish.

If you take the time to watch the video a few times, and practice along with it. You WILL make sushi good enough to eat, and present to your friends, family (just utterly show off).

I'm just really glad I can finally say there is now a sushi instructional video that I feel was worth every penny of my purchase. If you want to really learn how to make sushi well, then Ken Sushi Volume 1 will be your number one resource. The only negative thing I have to say is where the heck is volume two????

My experience with Ken's Sushi Video was great !!!
It is a very simple way to see and learn the bases of Sushi, Sashimi and Maki (rolls).
Amazing way to bring something new home, and discover the wonderful taste of Salmon, Tuna and even create your own variations of those dishes.
It is very complete for a first version, and once you view, listen and learn the basic stuff you need to accomplish many exotic dishes, you will amaze your guests in the safety of your home.

I recently purchased from Amazon two highly rated books on making sushi at home before ordering this DVD. Both books are excellent and I wouldn't give them up. Even so, I struggled with my at home sushi before Ken's video instruction. Nothing comes close to watching a master chef work. After the first time watching Ken's DVD, I resolved a number of problems in making my own sushi and am finally happy with the results. Now I can relax at my favorite sushi bar... without straining over the counter to see what the chef is doing. This is well worth the purchase price and a necessary item in your sushi library.

First of all, I am not a video producer so can not speak to the quality of this DVD other than from a viewer perspective. In my mind...it is clear and crisp and Ken is easily understood. I know one rater said the quality of the video was in question...I did not see that.

You will like Ken immediately. He is just one of those folks you know you would like. He speaks very clearly and slowly. I watched the video the first time just for pleasure and the second time I took a few notes. Jotted down Ken's recipe for sushi rice and etc.

Armed with this video and a book such as the excellent "The Complete Book of Sushi" by Hideo Dekura, Brigid Treloar, and Ryuichi Yoshii. I can guarantee you will be well on your way to your first rolls or your first Nigiri sushi. One thing I would do before rolling your own though is to stop by a sushi bar and sit right in front of the chef. Watch him and enjoy a nice lunch or dinner. You will build confidence just watching him prepare the food.

The video covers a lot of stuff in a short time. (one hour) but it is well worth the spend.

The only thing I wish Ken would have shared was his recipe for spicy sauce. Guess I will have to go to Canada and ask for it. :)

Ken also discusses types of fishes and seafood, how to care for it, how to slice it, where to get it and etc.

You will enjoy this video (watch the bloopers at the end...it will confirm Ken's sense of humor)

I was stunned by the level of detail packed onto a one-hour DVD! I've got to admit that I'm more of a fan of eating sushi than I am of preparing it (the nicks on my fingertips tell the story), but Ken's incredibly detailed instruction made me believe that even I, with no discernible motor skills, could actually do it!

One note, though: this disc couldn't possibly capture Ken's gregarious personality and his easy warmth with patrons. I've been visiting his restaurant for a couple of years now and he's one of the main reasons why I keep coming back. At the end of a particularly long day at work, I love to just sit and chat, watching him prepare the delicious food I eventually take home.

And I may as well add a shameless plug: if you're ever in the east end of Toronto, and feel like going out of your way for good (no, great) food, IT IS WORTH THE TRIP! I eat a LOT of sushi and Ken makes some of the very best in the city! The rolls he creates in the latter half of the video are among the most delicious on the menu (trust me, I've tried them all!). It's a pity he didn't tease viewers with his House Roll (though I don't want to give away any of his secrets...).

The video is great, it really help with my sushi parties. My wife is very happy with my improvings in roll making. For sure is a good purchase. Besides sushi making techniques there are few tips on cutting and handling bacteria, which are very helpful

Well, I liked it a lot. It gave me all the information on how to prepare the fish and how to work with knife. The greatest takeaways however are the receipe for vinegard and wasabi - it is excellent! Being only an amateur with limited access to fresh fish, I would like to get more hints on how to handle frozen fish - what to look for when you are buying it and how to properly defrost it so it tastes best. Ken is so fast that it is hardly possible to see exactly how he prepares nigiri. But you will get it ultimelty :-)
I also got a book by Kimiko Barber entitled "sushi - taste and technique", but get the DVD only if you are a beginner. The book is not necessary in that case.
