This review is from: Kent's Carolina Barbecue Book: Carolina barbecue restuarant reviews, recipes, history, culture, more (Paperback)
This book is a compendium of Carolina BBQ passion culled from years of Mr. Craig's hosting a web sight that was unfortunately removed due to the author moving out of state, and having too much other stuff going on to maintain it. Fortunately he thought to put it in a book for those of us who have come to lean heavily on the now-defunct web sight for BBQ destination tips in (mostly North) Carolina.
H. Kent Craig has spent many years eating Carolina Q, and he shares his BBQ experiences and knowledge growing up and living most of his life there. He also has guest reviews. I have personally found the author's reviews to be much more in line with my own tastes than the guest reviewers. In fact, some guest reviewers (in my opinion) have no right to be in print after I tried some of the places they recommended, so I suggest sticking with Mr. Craig's reviews mostly - he hasn't done me wrong yet.
I do have some problems with the format/ layout as well as some other issues with the book that prevent it from having a smooth flow. The table of contents has some errors, some page numbers repeat themselves with different content written on them, and there could have/should have been better arrangements, such as dividing the reviews between Eastern Carolina style BBQ and Lexington, or "Western" style BBQ.
Also, the section of "sample" reviews in the front of the book - where an incomplete portion of a review is given with an invitation to find the complete review later in the book - is a pointless and frustrating waste of paper. Just print the whole reviews the first time - I mean, the book is in my hands already so that should imply a certain amount of commitment to read further.
The recipes should be in an appendix in the back and not in the front.
Also, in quite puzzling fashion, Mr Craig states he will not print "one pig" reviews (lousy places) out of gentlemanly respect (or fear of libel suits) for those establishments by himself or any guest reviewers, but then later in the book he has a section where a guest reviewer does indeed have some lousy reviews of places using words like "awful" and "disgrace."
At any rate, the real meat of this book consists in the three and four pig reviews, the explanation of eastern and western style BBQ, and the section of South Carolina BBQ history.
