These knives have a superior edge out of the box. They slice cleanly through meat and vegetable matter without effort. The handle shape is well thought out, ensureing the hand clears the cutting board. The best thing about Kershaw's carbon steel, is that it touches up so easily. A few strokes on a ceramic rod, and the edges are restored to as new condition - Stainless knives are too hard to sharpen easily - and all knives need sharpening at some time.
Do yourself a favor and buy this set - you'll love it.

Simply put, these knives are amazing. Perfect Japanese balance and amazing sharpness. The handles are beautiful and very comfortable. Exactly what you'd expect from KAI/Kershaw.
My two favorite knives from the set: 8" Bread Imagine slicing through a bagel with zero effort; no sawing, no smushing. That was me this morning using the 8" bread knife. My girlfriend watched as I "showed off". She said, "it looked like a magic trick, it was so effortless." 9" Slicing The 9" blade is awesome for roast beef and turkey. In fact, slicing up the holiday bird has never been easier. The increased length really makes a difference for smooth, long slicing. If you have an opportunity to buy this set or open stock 7700 series knives, jump all over it. You'll never go back to a German blade again. :)

This is my first 'nice' knife set I have ever purchased. These have been great. I love how light they are. They also have smaller handles so with them being so light, I feel very comfortable using them. They also seem to hold their sharpness very well. Great set.
