*Keysands Water Kefir Grains* You will receive one tablespoon of our live active water kefir grains in their dehydrated state, which will rehydrate to 1/4 cup (4 generous tablespoons) and produce about one quart of water kefir starting out. These little guys will grow quickly so you can make much more at a time! An easy step-by-step guide is included to help you get started brewing your first batch. We use Organic Whole Cane Sugar to grow our grains, but they are not picky eaters and will gladly thrive on any sugar you give them. My husband and I have been enjoying the benefits of dairy-based kefir for a few years now, but maybe I wasn't enjoying it as much as he was, because frankly I don't care for dairy products - they feel heavy to me. So I decided to give "water kefir" a try, and was thrilled to find out that you can get them online because they can be dried and shipped, unlike the dairy-based kefir grains.

These came with very good instructions on how to get started, and it didn't take long at all - maybe two days - for the grains to reconstitute and get active. Honestly - and maybe it sounds a bit silly, but - it feels like they are now a member of the family. Members?? Anyway, they and I now have a nice working relationship and I have successfully made many batches of fruit-flavored kefir that I use for a morning tonic.

I was thrilled to find out that the drinks produced are NOT sweet. I hate sweet drinks. I suppose you could add sweetener to them if you wanted to, but why ruin a good drink? These are just plain refreshing! And if anything, the probiotic benefits are even greater than those from the dairy-based kefirs (at least, they are for me.)

After a couple of weeks in our home, the grains increased enough in size that I was able to drop a few into a gallon of apple juice and produce a really fine hard cider that everyone in the family likes a lot.

Now that the grains in the cider have built up a nice population of yeast, I am experimenting with making beer. The probiotics produced by the grains prevents non-beneficial bacteria from forming, so that you don't have to be so scrupulous about keeping everything absolutely sterile during the brewing process. Brewing beer with kefir is MUCH more forgiving than the "regular" way.

The shipment arrived relatively quickly (1 week or so), and it came with twice the amount of grains that other places are selling for the same price.

It arrived in a bubble envelope with the grains in a sealed plastic bag, with printed out instructions on how to rehydrate the grains and make water kefir. I rehydrated them according to the instructions and by the end of the first 24 hours they were looking rehydrated, by the end of 48 hours the sugar water solution smelled like fermentation was starting.

When fully rehydrated, it comes out to 8Tbs of kefir grains, or enough for 2qts of kefir brewing at one time (more than enough!).

EDIT! After one fermentation (using 3T white table sugar and 1T molasses), I now have 11T kefir grains! The molasses doesn't give the best taste to it, but definitely makes healthy grains reproduce. So, if you're wondering if you'll receive healthy grains.... you will.

I highly suggest when your grains are reproducing to set some aside and dehydrate them. Just put a some paper towel on a plate, spread the grains and then put paper towels on top. Leave it until they're fully dry (helped that I was in AZ, but should work anywhere) and then stick them in a sealed container and forget about them.
I did that last summer. I then moved and had to compost my living grains. I just now rehydrated the back-up grains, and they're doing fine! They were just stored at room temp in a little plastic container in my spice drawer.

Things to consider: Concentrace mineral drops added to filtered water makes them reproduce much better than without. Chlorine is the enemy.

A friend introduced my wife and I to kefir (most people pronounce it like the actor, Kiefer - but if you want to say it right, it's "ke-FEAR"). The grains she gave us were for milk, and we tried them, but got a bit of a tummy upset. Besides, we've been weaning ourselves off all dairy products. My wife read up on the water kefir grains and liked what she saw. The price+shipping gave us pause, but then we figured it was a one-time purchase, after all. The grains multiply, so all you ever need to do is buy them once.

She ordered the Keysands organic crystals, and put them to work. We've tried all kinds of fruit juices, producing refreshing, mildly fermented, fizzy drinks - delicious!

When I was a kid, my dad loved ginger beer - a non-alcoholic soft drink. We decided to make kefir ginger beer - which does have a little alcohol in the finished product, because kefir grains cause fermentation. We blend raw ginger root, add some sugar to taste (it should be sweet before the kefir does its work). We ferment it in glass gallon jugs to begin with, then transfer it to the Grolsch-type beer bottles (also called "swing-top" bottles) - the ones with the reusable caps that lock down on a wire hinge.1 Liter Round Italian Swing Top Glass Bottle
