For light, flaky pies and tart crusts, dough needs to be airy. Repeatedly running a rolling pin over dough presses out air, resulting in heavy, drier pastry. The Dobord (pronounced DOUGH-board) makes it possible to quickly roll out dough with the lightest possible touch--a foolproof way of getting perfect pastry every time. Once dough is pressed to the thickness specified in your recipe, the frame prevents it from being pressed any further, which makes for a uniformly thick dough that will bake evenly. The Dobord is also great for rolling out pizza dough and certain kinds of cookies.

The board adjusts up and down in relation to its frame. Running the 20-1/4-inch rolling pin over the frame presses dough to a preselected thickness on the board. For example, setting the frame 1/8 inch higher than the board results in dough precisely 1/8-inch thick. There are five possible settings: flat, 1/8, 1/4, 3/8, and 1/2 inch. To adjust the setting, simply turn two thumbscrews to release the front rail from the frame. The frame's other three rails then slide off the board and can be repositioned into tracks attached to the board's side.

The Dobord measures 15-1/2 inches square and flips over to act as a cutting board. Made of unfinished birch, the board lasts forever provided it's treated with food-grade mineral oil occasionally. Accompanying the board and rolling pin is a wood tool for safely sliding dough out and pushing it into hot oven racks. --Fred Brack

This product is amazing. It does it exactly what it says. It's easy to use and places less stress on your hands because you don't have to apply as much pressure to the pin. If you do a lot of baking which requires rolling of any type of dough this is a great investment. It's quick and easy - I used to use 4 pans at a time to bake cookies and often found myself behind (one pan would be ready to come out of the oven and I would not have another ready). With this I was able to use 6 pans at a time and stay on track. I actually cut and rolled out my cookies in a little over half the time it used to take me and I always had a pan to go in the oven the minute one came out.

For anyone who thinks this makes a mess I have two words - PARCHMENT PAPER! All you have to do is cut and fold a piece of parchment paper to fit the inner (lower) part of the board. Pull the paper under grooves on either end. Tape the end to the bottom, pull through to the other side so it's taught and adjust so that the parchment lies smooth. Roll your cookies out between that and another piece of parchment. No extra flour, no mess and you don't have to fully wash the board every time you use it since it does not come in contact with dough. Because you don't use extra flour you can re-roll your dough without the worry of it becoming tough.

I also highly recommend using a silicone baking sheet such as Silpat or Exopat. You can reuse your cookie sheets without having to grease them or wash them in between batches.

I made cut-out cookies this Christmas using the traditional wooden board and rolling pin with handles and spacer bands to determine height. Today I used the Dobord Set instead. What a difference! I was finished in half the time. I was skeptical about the dowel-style rolling pin as I had never used one. However, together with the Dobord, it flattened and rolled much quicker than the traditional style. It also took less effort which anyone with arthritis can appreciate. The Dobard is easy to set up and the entire process worked exactly as described by the manufacturer. I couldn't be more pleased. I didn't find clean-up any more involved than cleaning the usual wooden board or whatever surface one is using. Storage could be a problem for someone with limited space. I was concerned about this as well. However, after using the Dobord it is well worth finding a place to store it.

This is one of those "Gee, why didn't I think of that" products. I have never had so much fun baking. Everything is perfect. The adjustments are a no-brainer and it cleans up really easy.
