AWFUL! Why was this book so successful?,

When I flipped through this book in a shop, the recipes didn't strike me as particularly tasty-sounding, but since it was such a hit I bought it -- and my hunch was right! The recipes are ridiculously time-consuming, force you to dirty every pan in your kitchen and buy a lot of commercial spice mixes -- and they taste DREADFUL! A bran muffin recipe that was supposed to be for a dozen (but only made 8) contained a full TABLESPOON of powdered ginger, which would poison an ox. I used only a teaspoon and it was still way too much. Don't waste your money

I don't have hours to cook!,

Hello? Rosie is a professional chef that makes a living cooking for others. I do not have the time or the ingredients to make these recipes. This is a pure Oprah-hype cook book. There are maybe 45 recipes in it and my goodness they take a long time to make. Get real!! Not all of us can afford personal chefs.

I bought Rosie's book with Andrew Weil (The Healthy Kitchen) and had really good luck with some of the recipes in that book, so I decided to get this one, too. The recipe for "unfried" chicken is worth the cost of the book just by itself! Some of the other reviewers are critical of the book because the recipes are time-intensive. I really didn't find them to be that much more time consuming than other recipes, but I thought that the quality of the recipes made them worth my time. I have always had a hard time sticking with healthy eating habits, but I found these recipes to be very satisfying. I'm a HUGE fan of both of Rosie's books!!

The Un-fried chicken recipe alone is worth the cost of the book. Fried chicken has always been one of those things I just don't touch, but this recipe made it possible. Her recipes are beautiful, delicius and low-fat. What more could you want?

started using this cookbook jan 1. So far ive made 3 of the recipes in it...the cream of broccoli soup, unfried chicken, and angelhair pasta w/ lemon and garlic and love them all. one thing i do not like is that they have some spices listed in the book that i can't find in my grocery store...old bay sng, spike sng etc... so far ive been able to find most ingred. i just hope they don't get too complicated my kids liked the unfried ckn...except next time i'll use boneless ckn i wish that there were more recipes in the book and more desserts

Their are some really good recipes in here. Yes some of them take a while to prepare and cook, but the finished product is worth it. I also really liked that they were healthy foods.

Do you like to spend time in the kitchen? Do you like spicy food? Are you not afraid to try new and not so obvious ingredients? If you answered no to any of these questions, skip that book. But if your answers are 3 times yes, that is your chance to eat low fat, low calorie food and ACTUALY ANJOY IT. I just wish that Rosie Daley would publish a second book. Thank you, Rosie.

Short cookbook, but interesting recipes,

Rosie Daley is probably as well known for serving as "Oprah's Chef" as for her own work. In an Introduction, Oprah Winfrey notes (page xi): "I once believed that eating healthy meant eating food that was missing something--TASTE." Then, at a spa where she went, she experienced the meals of Rosie Daley. Of that experience, Winfrey said (page xi): "This new way of eating very low fat, low sugar, low salt. . .has made such a difference in my life."
This short work includes recipes for soups, salads, pasta, entrees, vegetables, and desserts. One of the things that I really like seeing is no salt among the ingredients and low fat ingredients as part of recipes. For instance, on page 69, she provides her recipe for pizza sauce. No salt, no sugar. Just tomato paste, tomato puree, and, for some zest, red paper flakes, oregano, basil, and thyme. On pages 86-87, there is an interesting recipe for Peppered Tuna Nicoise. Lots of ingredients--including wasabi and ginger for some kick. However, instructions are pretty straightforward. Finally, an interesting potato dish--Roasted Mustard Potatoes. As with the items already mentioned, a little spiciness is included, with chili powder and cayenne pepper. Pretty easy to make and a potato dish with a bit of pizzazz. The main problem for me is that there are so few recipes. However, what is included has some interesting and fairly easy to make items.

The recipes I tried were the unfried french fries, unfried crabcakes, and unfried chicken. All were rather bland and needed modifications. The yogurt idea with the unfried chicken was good but it turned out a bit dry and somewhat bland. Maybe less oven time and more spices. The french fries were good but needed a bit more seasoning. The crab cakes needed more egg in order to hold together and were quite dry and tasteless. I like the healthy ideas behind the recipes but they just need more flavor. I probably won't try many more of the recipes given how the first three I tried turned out.

I agree with other customers, that these recipes are time consuming, but they are soooooooooo delicious. I used Rosie's book to lose 50 pounds in 5 months. I do wish she would come out with another book with some easier recipes with the great taste that these have. Thanks Rosie!
