Throw out your "cookie sheets!",

This is a "half sheet pan" actually, like the full heavy aluminum sheet pans most restaurants use but half the size.
The size fits in a small apartment oven (like mine), but still holds twice as much as your average "cookie sheet" you picked up at the local grocery store isle. Most cheap "cookie sheets", like mine and your mom probably uses, are steel or teflon things that often burn the bottom of whatever is cooked on them if you're not careful.. My old cookie sheets would eventually (actually, very quickly) started to rust, got hard to clean, and looked like crap.. I found a good aluminum half-sheet pan doesn't rust, doesn't blacken the bottom of my food, and cleans up incredibly easily. I highly recommend picking one up! I bought this mainly to have a baking sheet that wouldn't rust, but ended up liking it for other reasons as well. This is a nice, sturdy baking sheet. And to think that I've been baking all these years on a flimsy cookie sheet! I have a large family, so I also appreciate being able to bake on a larger pan than the average-sized cookie sheet.

I didn't think I was looking for anything fancy - just an uncoated half sheet baking pan. Look at any consumer kitchen store, and all their "cookie sheets" are 11x17, 14x17, 12x16 and more. None of them are proper half sheet pans. The problem with that? Cooling/roasting racks are often designed to fit into a half sheet. Silpats/parchment paper are designed for half sheets. Recipes are designed for half sheets. This is the size that you should have. Moreover, if you're using parchment paper or a silpat, you don't need to waste your time with a nonstick(PTFE) coating, which will is proven to release damaging toxic substances into the air (kills birds, releases compounds hazardous to humans above 450F) and will likely end up with a scratched coating, shortening its lifespan. Stick with the old standby - a proper, uncoated, heavy weight half sheet pan.
