Throw out your "cookie sheets!",

This is a "half sheet pan" actually, like the full heavy aluminum sheet pans most restaurants use but half the size.
The size fits in a small apartment oven (like mine), but still holds twice as much as your average "cookie sheet" you picked up at the local grocery store isle. Most cheap "cookie sheets", like mine and your mom probably uses, are steel or teflon things that often burn the bottom of whatever is cooked on them if you're not careful.. My old cookie sheets would eventually (actually, very quickly) started to rust, got hard to clean, and looked like crap.. I found a good aluminum half-sheet pan doesn't rust, doesn't blacken the bottom of my food, and cleans up incredibly easily. I highly recommend picking one up! I bought this mainly to have a baking sheet that wouldn't rust, but ended up liking it for other reasons as well. This is a nice, sturdy baking sheet. And to think that I've been baking all these years on a flimsy cookie sheet! I have a large family, so I also appreciate being able to bake on a larger pan than the average-sized cookie sheet.

I didn't think I was looking for anything fancy - just an uncoated half sheet baking pan. Look at any consumer kitchen store, and all their "cookie sheets" are 11x17, 14x17, 12x16 and more. None of them are proper half sheet pans. The problem with that? Cooling/roasting racks are often designed to fit into a half sheet. Silpats/parchment paper are designed for half sheets. Recipes are designed for half sheets. This is the size that you should have. Moreover, if you're using parchment paper or a silpat, you don't need to waste your time with a nonstick(PTFE) coating, which will is proven to release damaging toxic substances into the air (kills birds, releases compounds hazardous to humans above 450F) and will likely end up with a scratched coating, shortening its lifespan. Stick with the old standby - a proper, uncoated, heavy weight half sheet pan.

I was looking for a new sheet pan since the cookie sheets I already had warped almost every time I used them; I'd hear a large popping noise when they were in the oven and they'd be misshapen- they'd usually return to normal if I left them to cool on the flat stove top. Still, very annoying. After I got my first sheet pan (I ended up ordering a 2nd one later) I've used it for baking and for broiling and no warping! I got rid of all my old cookie sheets and I'm never gonna go back.

What I love about this cookie sheet is that it does not warp in the oven with high temperatures and it cleans easily. I have used it a few times and it still looks new.

We have a small sided aluminum pan that we love and have had for years. After purchasing several sheet pans with teflon coating, that always ends up coming off, I decided to go in search of a larger aluminum sheet pan.
I was leary of the shiny look when I received it, as my other pan is a matte finish. We have used it several times and what finally convinced me to write this review was because of the fish my husband cooked on it the other night. I don't think he used much, if any, non-stick spray since the juices from the fish looked pretty baked on by the time it was done. We put some water in the pan the next morning while crossing fingers that it would come clean. And to my absolute joy and amazement, it did! It is a clean and shiny as the day I unpacked it! I highly recommend this pan to everyone and will probably get another and even other sizes. No more crappy teflon pans!

I was excited when this arrived, as it appeared to be the same size and weight of one that I've owned for years and love. Unfortunately, it warped after only one use and is on it's way back.
Updated - I didn't manage to actually send this back in time, so decided to go ahead and use it, warp and all. After pulling it out of the dishwasher we realized that where the sides roll back into the bottom of the pan isn't solid, there's actually a gap that allows water to collect. It's going to be have to be hand washed to ensure that dirty water doesn't pool inside. I predict that it's getting thrown out soon. Very disappointing.

Stainless anyone?,

Tim is absolutely right. Cooks Illustrated did a roundup some years ago and their basic conclusion was that lighter is better. Dark cookie sheets burn things. (i.e. nonstick.) (The also gave a nod but not really a review to those two-layer airpans. Avoid them--CC cookies take forever to brown, come out crunchy instead of chewy.)
But why doesn't anyone make a stainless half sheet!!! It's a breeze to clean with a metal scrubber, and much easier to keep bright and light than aluminum. This not to mention the research suggesting the links between aluminum and Altzheymer's. |
