Style Name: Slicer/Shredder Verified Purchase
Length: 9:35 Mins
I purchased this with the intention of just using the shredder for cheese; I make a lot of home made pizza and I finally broke my food processor. I am not going to use the slicer but I thought it would be fun to try it out and let you see what it does right out of the box. This video has been edited; I did quite a bit more slicing of vegetables but had to cut it down to make the 10 minute time limit. The only thing that the slicer did right was slice carrots. Everything else was not sliced properly--a lot more shredding than slicing with several of the veggies. The apple came out pretty good and we made some great apple chips from those. I didn't try using the shredders on the vegetables for making hash browns, but I imagine it would have done a decent job.
Things you didn't see on there were onions and cabbage. The slicer did a decent job on the cabbage (also the cabbage removed the orange staining on the housing caused by the carrots) but there were a few large chunks that got stuck between the slicer and the housing. Other than that, it was practically perfect for coleslaw. The onion sliced fairly decent as well, except for a few big chunks. The harder the food was (carrots, apples, radishes, etc.) the better it sliced. The blades of the slicer do not appear to be very sharp which may have a lot to do with the poor slicing performance. I never cared for any kind of food slicer, I feel that its faster overall to just cut by hand with a really sharp knife. Now as far as the cheese shredding, the product does a fairly good job, but I am going to use the fine grater though in the future.

Style Name: Citrus Juicer Verified Purchase
Each week we buy a dozen oranges and a dozen grapefruits (organic if possible). This juicer attachment makes juicing them much faster. Then we freeze most of the juice and thaw it in the fridge for 24 hours before we drink it. It would be hard to go back to regular juice. We also have a dedicated juicer for carrots, apples and pears, but it isn't good for citrus. We store the juice in mason jars in the freezer.
1. As in an earlier review, use the mixer bowl with a large strainer place across it instead of the strainer attachment which is pretty useless.
2. You don't need to seed the grapefruit using the big strainer.
3. Hold the fruit so that your hand is at the top (fingers facing upwards) and brace the top of the mixer with your other hand. This way the juice does not run down your arm.

Style Name: Citrus Juicer
I really like this attachment and use it frequently. That said, I have some suggestions:
For users-
1. Use the KitchenAid mixing bowl to catch the juice, and place a large standard kitchen strainer across the bowl. This speeds things up a lot!
2. Rub some shortening on the aluminum shaft before inserting it into the brass sleeve. If you use your juicer a lot, this will greatly prolong its life.
For KitchenAid-
1. The plastic piece that inserts into the mixer should be made out of metal, instead of plastic with a metal sleve. On mine the plastic is cracking away from the brass.
2. The aluminum shaft should be brass or steel. As it is, the bearing surface is a small area of aluminum that even when lubricated, is showing lots of wear.

Style Name: Grain-Mill Verified Purchase
Grinds whole grain wheat into a nice fine flour for bread making. Works as advertised.

Dinged it a star because:

- limited to grinding 10 cups of flour during a session, then having to wait 45 minutes for the motor to cool. Instructions do not delineate between professional series mixers and smaller models so not sure if this is an issue for the bigger mixers.

- blades are steel - long term storage requires disassembly and coating blades with mineral oil to limit rust. Must clean initially before first use to avoid clogging

- housing is fairly substantial aluminum, hopper holds about three cups of berries. The housing does rock and roll a bit when you grind at the finest setting for flour in a single pass; nothing broke and I guess it would be ok, but seeing the deflection in that housing left me uncomfortable.

Bottom Line - ok for occasional use. Buy a dedicated device if you have 10 kids and make bread every day from fresh ground flour as I can't see this holding up to serious use for any length of time.

Style Name: Paster Roller and Cutter Set
I ran one ball of dough through the machine and I was done. No metal shavings, no grease, no discolored parts. I have only had my machine for 5 years now. Many of the reviews citing problems with this device are older than that, so perhaps the manufacturer listened to the complaints of those who purchased their machines longer ago and who had problems. A success story for quality control and buyer feedback??

A couple of tips. I thought that a low speed setting for the mixer would be most appropriate. Bad idea. I find that the best speed settings for the roller and slicing attachments are 3 or 4. If you go slower, you get a less regular texture. Too much quicker and the dough tears.

Not documented in the booklet that comes with the device is that you can widen the rollers a bit extra if you go clockwise a bit past 1. This is where I start my rolling. I usually put the ball of dough through this setting 2-3 times, folding it in half before each re-roll.

I then narrow the rollers 2 notches for each subsequent rolling until the desired thickness is achieved. I use the following settings for different types of pasta:
Ravioli - 4
Linguini - 6
Fetuccini - 5
'Broken Noodles' - 5

You can go thinner for things like angel hair pasta, but I usually prefer heartier pastas which Tuscan-inspired sauces.

Take note - if you are making pasta for a group larger than 3-4, or are otherwise not planning on taking it directly from the roller to boiling water, you will need a good pasta rack/dryer unless you have acres of counter space. If you attempt to accumulate your pasta in a 'pile' before cooking, you get a big blob of pasta-ish dough and you will need to completely re-roll it.
