Typical knife sharpeners change the angle of the knife to match the preset angle of the sharpener. The KitchenIQ Adjustable Manual Knife Sharpener is the first manual style sharpener for the kitchen to adjust the angle of the sharpener to the original angle of the knife. This allows you to sharpen at the correct angle of that knife and remove less metal. Removing less metal will prolong the life of your knife. This sleek three slot knife sharpener has unsurpassed technology that allows the user to sharpen a knife to the original factory angle. It’s easy to adjust the sharpening angle by simply pushing down and turning the knob, adjusting both the coarse and fine sharpening slots. If the angle of an Asian knife is unknown, use the recommended 16-degree mark on the knob or select an angle within the red area. If the angle of Euro/American knife is unknown, use the recommended 20-degree mark on the knob or select an angle within the gray area.

Two Stages of Adjustability

The coarse slot features diamond rods ideal for sharpening a very dull or damaged knife. The fine slot’s ceramic rods quickly polish and finish the edge of the knife. The fine slot can be used for regular knife maintenance. This Manual Sharpener also includes a fixed angle slot with triangular shaped ceramic stones designed to sharpen most types of serrated knives. So you can sharpen straight edge and serrated style knives with this extremely versatile knife sharpener. How Do You Know the Angle of Your Knife?

Most knife companies will publish their angles so be sure to check the brand and style of knife if you are unsure. Otherwise here are some common sharpening angles: Kitchen Knives ( Euro/American ) are 20 degrees per side. Kitchen Knives (Asian) are 16 degrees per side. Fillet Knives are 16 degrees per side. Pocket Knives are 20 degrees per side. Hunting Knives are 22 degrees per side. Tactical Knives are 22 degrees per side.

A knife is only as good as how sharp and well maintained its blade's edge is. An inexpensive $25 Victorinox chef's knife that has its blade well maintained, is much more valuable and useful in the long run than say, a $200 Wusthof whose blade is neglected. If you do a lot of cooking that involves chopping or cutting and/or have a lot of knives (particularly expensive ones) that you care about, you should have a sharpener.

One of the most attractive features of this sharpener is the selectable edge angle. While most knife makers use similar angles, certain blades, like Japanese santoku chefs knives, use very fine angles, or are only ground one one side. Unless you are a pro with a sharpening steel, this sharpener's selectable angle makes maintenance of exact angles a cinch.

Many consumer grade kitchen knives use a larger angle (>20deg), with a consideration for the common consumer that doesn't maintain their knives. This allows for durability and redundancy, but it also sacrifices how well a blade can cut.

The Edgeware's angle selection can allow someone to either maintain the manufacturer's edge, or to customize their blades to have finer, sharper angles (with some increase of making the edge slightly more brittle). Conversely, particularly for pocket knives carried every day, I use a larger angle for improved durability.

I'm very happy with this purchase. The large grip makes it hard to hurt yourself while sharpening and honing a blade, while making it easy to keep stable while you run the knife through. If you're considering buying someone a nice knife as a gift, consider getting them a nice sharpener too.

Draw the blade through the coarse sharpener 10-20 times with light pressure, and another 10-20 times through the fine sharpener. Voila! Blade is good as new (and that is very sharp indeed!).
