Product Description

Sword making history in Japan dates back over 1,000 years, when master sword smiths practiced their craft making weapons for warriors. Modern Japanese kitchen knives are a descendant of these renowned swords, as evidenced in the details, ideals and spirit that have been passed down through generations that go into each tool. This particular knife has a santoku shape. Santoku shaped knives have a flatter cutting edge than a traditional western chef's knife, with very little upward curve at the tip. Therefore, this knife excels at tasks that require a single downward cut rather than a rocking motion, making it a good choice for prep work such as slicing, dicing and mincing.

My first impression when picking up this knife was how light it was. The blade is thin - it's just thick enough to not be too flexible. The bevel is ground nice and thin near the edge and it cuts well. It's also holding it's edge well, I've only needed to give it a few swipes on a ceramic rod occasionally to keep it sharp. The handle was unfinished, so I gave it a coat of polyurethane to seal it. The dark area that shows in the photo - the middle section of the blade between the edge and the flat portion of the blade - is coated with teflon. The teflon doesn't work as a non-stick surface for this purpose, it useless, but harmless. I don't know what type of steel it is, the packaging was all in Japanese. I wasn't sure about it at first, but I've been using it quite a bit. I have a rack full of knives, but I reach for this one fairly often - the light weight and (almost) round handle make it easy to use for a variety of things.

Awesome knife! Once I sharpened it in a wet stone it kept its sharpness for a long time. Didnt have to sharpen it every other day as I do for my other knives.
