High quality, practical, does keep food hot a lot longer, January 11, 2012

I just inherited this braiser and its 4.5 quart companion. A friend regifted them to me because "it was an impulse buy three years ago, I just loved the color, but they've been sitting on my kitchen shelves gathering dust - I just know they'll be happier in your kitchen."
Having already owned two great braisers and preferring to plate meals instead of serving them family-style, I didn't see how these pots would be useful in my kitchen. The green apple color of the melamine is lovely, but why even bother using that? Well, let me tell you, they really work. The food does stay hot in these pots a lot longer. I made chicken stock in the 4.5 quart pot and took it straight from the burner to the melamine holder and it stayed hot all afternoon. I usually make stock in my 7 quart Kuhn Rikon pressure cooker (I just use the pot without pressure for that) and the stock is already lukewarm after four hours.
However, precisely because these pots keep food quite hot for hours, I would not use them for meals containing ingredients which might overcook and even disintegrate once they've reached a certain heat point (e.g., rice, pasta, sweet potatoes, squash, lentils).
The pots are beautifully made, sturdy and don't seem to have developed hot spots and the lids do keep moisture in. Nice, comfortable handles, too.
The melamine holders can be used as funky bowls.
A great choice for people who enjoy cooking, prefer to serve food family-style and could use a couple of extra bowls made from high quality melamine.
