Part of the Revolution series, Kyocera's most popular line, this 5-1/2-inch Santoku performs a wide variety of cutting tasks, from fine chopping to dicing and paper-thin slicing. The Santoku, a Japanese-style chef's knife, features a broad blade and low tip for less rocking action than a classic European chef's knife. It features an ultra-sharp ceramic blade as well as a deeper profile for greater knuckle clearance. And unlike steel blades, ceramic blades will never rust or change from its natural state. A comfortable, ergonomic resin handle provides precise control, while its distinctive shape makes it both easy to find and easy to use.

Kyocera has pioneered advanced ceramic kitchen knives, which are impervious to acids, juices, oils and salts, leave no metallic taste or odor, and help maintain the freshness of fruit and vegetables. The razor-sharp blade retains its original sharpness 10 times longer than steel knives. And because the ceramic blade is so light, no artificial weight is added to the handle. This creates an extremely balanced, lightweight tool that reduces fatigue during repetitive cutting tasks.
Kyocera knives are made in Japan, and they should only be washed by hand. Use on a wood or plastic cutting board. All Kyocera ceramic products are warranted to be free from defects in material or workmanship for five years.
Because diamond wheels are required to sharpen ceramic knives, you should only use the Kyocera Electric Ceramic Knife Sharpener for re-sharpening at home. Additionally, Kyocera offers a complimentary re-sharpening service (shipping fee required; see more below).
According to The Cutlery and Allied Trades Research Association (CATRA), an independent testing organization: "Recent tests show that the life of a Kyocera ceramic blade without resharpening is approximately 15 times that of a typical steel blade." Advanced Ceramic, or Zirconium Oxide, is extremely dense, achieving a much tighter weave than any metal material, resulting in the finest and sharpest edge possible.

My first cutting task with this knife was slicing a sweet potato. I thought, "No big deal." This felt the same as one of my steel serrated knives, which is geting slightly dull. Then I sliced a carrot and I was amazed. I just slid the knife through the carrot, with very little effort. The slices were so thin they were clinging to the side of the blade. Next up was raw chicken breasts. With just a little pressure, the Kyocera ceramic knife made some really deep cuts in the chicken. This is when I realized I would always have to be alert when using this knife.
I have heard it said that the most dangerous knife is a dull knife. The logic behind this is that you need to use more force with a dull knife and there is a greater possibility of the knife slipping and going somewhere unexpected (like into your hand or your leg). If this is true, then this is a really safe knife. This ceramic knife has good balance, is really light and has a very comfortable handle. It will never rust. If your cutting needs include twisting, prying and chopping, then a ceramic knife is a bad choice. It is very strong for slicing, but any sideways torgue applied to the blade my cause it to chip or break. You definitely don't want to drop this knife because it will most likely be damaged. I bought the Kyocera paring knife and it is just as outstanding as this larger Santoku knife.

This ceramic knife is pretty awesome. I had no idea that a ceramic blade would cut as well or better than a metal blade! I was able to cut thin slices on strawberries, potatoes, and able to cut raw chicken with ease... Is it worth the price? Maybe if it was about $15 less... but it's a pretty good knife!
