Part of the Revolution series, Kyocera's most popular line, this 5-1/2-inch Santoku performs a wide variety of cutting tasks, from fine chopping to dicing and paper-thin slicing. The Santoku, a Japanese-style chef's knife, features a broad blade and low tip for less rocking action than a classic European chef's knife. It features an ultra-sharp ceramic blade as well as a deeper profile for greater knuckle clearance. And unlike steel blades, ceramic blades will never rust or change from its natural state. A comfortable, ergonomic resin handle provides precise control, while its distinctive shape makes it both easy to find and easy to use.
The Y Peeler includes a non-stick, rotating ceramic blade that won't brown foods or transfer a metallic taste or smell, and it stays sharper longer than a peeler with a stainless steel blade. It's dishwasher safe.

Kyocera has pioneered advanced ceramic kitchen knives, which are impervious to acids, juices, oils and salts, leave no metallic taste or odor, and help maintain the freshness of fruit and vegetables. The razor-sharp blade retains its original sharpness 10 times longer than steel knives. And because the ceramic blade is so light, no artificial weight is added to the handle. According to The Cutlery and Allied Trades Research Association (CATRA), an independent testing organization: "Recent tests show that the life of a Kyocera ceramic blade without resharpening is approximately 15 times that of a typical steel blade." Advanced Ceramic, or Zirconium Oxide, is extremely dense, achieving a much tighter weave than any metal material, resulting in the finest and sharpest edge possible.

These ceramic blades are VERY sharp, to the point of not even knowing when you have been sliced. I got a small cut on my thumb just from lightly running it across the blade, and that was very lightly.
We all know that tomato skins aren't thick but hard to cut thru with a dull knife. This knife sliced them up effortlessly! Based on one week's worth of cutting I can confidently state that this will be my sharpest knife for years. And, who cares if they are pink?? Buying them this way, as a set, is very economical. Again, watch your fingers because these ceramic blades are extremely sharp.

This set is beautiful, nicely packaged and arrived in a very timely fashion! The knife is nice, sharp and light. The peeler is a must if u have one of those old hand peelers!

I already owned the 5.5 pink knife and loved it. It's the knife I grab about 98% of the time for everyday use, and I cook a lot. Sometimes I get in the 'zone' and don't use my brain. You canNOT use any ceramic knife for hard or frozen foods. The knife comes with a leaflet that fully explains the do's and don'ts. I knew better but didn't do that and the blade snapped in a big chunk. This was totally my careless stupidity. I loved this knife so much I bought this set right away, with the peeler, at a better price I originally bought just the knife. I see this is available in white, black, or pink handle. I like the pink handle b/c it shows up easily in the drawerful of knives and utensils. No hunting for it, I want it at the ready. It feels comfortable in the hand. The knife never needed sharpening in all the 5 yrs I owned it. So if you just don't try to cut a frozen piece of ginger with it like I did, it will last you a long time.
