I make sausage a lot. I saw collagen casing on television and decided to give them a try. They worked amazingly, and I have since been a huge fan. I make about 40 pounds of sausage a week, and because of this large amount this site is not the best price for me. So,I purchase them elsewhere, If, however, you will be making small amounts, maybe 5 pounds every couple months these are the casings I would purchase.

These work great, and are perfectly sized for italian sausage and kielbasa. They are not natural casings, so they have their own advantages and disadvantages. They will break if overstuffed, and they do not stick to the sausage as well as natural casings. They also do not stay twisted as well as natural casings do. They are a bit chewy and have a different mouth feel than natural casings. They are easier to use and require no prep or special stoage conditions. Just cut the length you need, tie it off and start stuffing. Most of the less than perfect reviews compare these to natural casings. They are not. As collagen casings go, these are the best I've used.

I have never had a problem making frankfurters with these casings. The problem is that they do not twist into links as well as natural casings, but what works best is to simmer the sausage as a rope, than slice into servings.

Having had some experience in the past with natural and artificial casings, I was a bit skeptical about using these casings.

LEM has discovered the right thickness to overcome the "paper" feeling of most artificial casings. These casings are supple, easy to manage on the stuffer tube and very flexible while stuffing. I've used both sizes and am happy with the results-they hold up well as your are stuffing so there isn't a degradation of the material or saturation that may cause breakage.

A great replacement for natural casings if unavailable or if there are hesitations due to using natural products for dietary concerns.

Shipped in re-sealable ziplock bags with hang cards, easy to cut off needed amount and reseal the rest.

If you want to jam some sausages right now, they are great. They take no prep at all, slip them on your tube, and away you go. Holds well, seals well, freezes well. Cooking is an issue though; grilling, not bad, ends up pretty close to natural casings; boiling, they tend to separate from the sausage (perhaps I should poke a bunch of holes in them prior to boiling, that may help); pan frying, especially if splaying them open, they come right off (although not a bad thing, sausage still held shape). And you can cut some off and seal the rest up for later. Bottom line though- IF I have the time I will use natural hog casing instead, it just has that better bite to it.

I ordered these for my first attempt at sausage making; once I got the hang of the stuffing process, it went very quickly. The casings were easy to handle, didn't split at all and the finished product was great! There was a nice snap when I bit into the sausage, and the casings didn't seem to add any taste. I'll definitely be buying more of these!

We are trying to figure out how to make healthier hot dogs for a very picky 2 year old. We found a great recipe online. The natural casings were a little more difficult to thread but they held up better when cooking, gave the hot dogs a more natural texture, and didn't break open when cooking. Oddly enough we didn't break one natural casing but the collagen broke several times, when twisting the hot dogs and when par-boiling.

First, the good. This collagen is super easy to use. You can feed it onto your stuffing attachment without soaking, which makes stuffing very quick and simple

The bad. The collagen doesn't require soaking so it is very brittle. We had almost a foot of the casing burst while stuffing, which meant that all that meat ended up as bratwurst patties instead of bratwurst. Also, because it is a no-soak casing, it doesn't do very well when wet so if you intend on boiling your finished sausages this casing will not work for you. We had two of the bratwursts we made dissolve while they were boiling in beer. It was a total mess and a total waste.

Only buy this if you intend to grill your finished sausages. Otherwise, spring for something that is a little more durable.
