This particular brand is exceptionally high quality and is a grade called 'pimentón de la vera'. It is different from the normal picante grade in that it has a smoky flavor that is supposed to be used for meats and sausages.
Among my uses are in lieu of saffron in paella and a substitute in recipes that call annato. In the paella it imparts a flavor that I cannot achieve with any other spice. You cannot use this together with saffron though because it will completely overpower the subtle flavors of that very expensive spice. As a substitute for annato this will color rich more red than yellow if used in the same portion size, but also has a spicy, smoky flavor that will change the flavor of the dishes in which it's substituted. Mostly for the better, but it's wise to experiment before serving at larger gatherings.
This and two other grades of paprika (Hungarian sweet and Hungarian hot) have permanent places in my spice rack. This one is the most unique in my opinion, as well as the most perfect for paella.
The smoke flavor is fantastic- sweet, mild, pervasive. Just a small pinch in whatever you use it for is plenty for a subtle smokiness and a little kick, or you can use more if you really want smoke. Mix it into a spice rub, sprinkle it on any kind of food before you cook it, add a pinch to a salad dressing, make your own BBQ sauce or hot sauce, add it to eggs, use it in goulash, whatever. With few exceptions, I like to add just a little of any given dried spice to foods such that it adds complexity, if you search really hard you might pick it out, but unless you try or someone tells you, you wouldn't know it's there. This is a great product for that purpose, if used very sparingly. This is a very high quality spice, worth the money. It was produced by artisans, not hacks.
