Designed specifically for preparing pastry-topped dishes like tarte Tatin that start on the stovetop, finish in the oven, and then must be flipped onto a platter for serving, this round, 9-3/4-inch, 2-inch-deep pan is versatile enough to be used in many ways. The pan is made of cast iron, with both exterior and interior clad in two coats of Le Creuset's famous bright enamel. As cast iron is unexcelled for heat distribution and retention and enamel is impervious to acids and odors, the pan cooks food evenly and gently without hot spots and can be used for marinating.
