I have owned many crepe pans over the years so I have enough experience to determine if a pan works or not. The Le Creuset Crepe Pan is hands down the best crepe pan I have ever had the pleasure to own. I would like to set the record straight - this pan DOES NOT need curing, nor creating a non-stick surface, or anything else to prep it. It is ready to use straight out of the packaging. All you have to do is rinse it in warm running water and dry it with a paper towel. This should be the ONE AND ONLY time this pan will ever be exposed to water - that's IF you use it solely for its intended purpose - TO MAKE CREPES. I read reviews here where people complain that it is not non-stick and that they make sausages, eggs, and what not with this pan. If that is what you are doing then don't spend the ~$100 to get this beauty. Spend it instead on a non-stick coated Calphalon pan or something else.

Here is how I treat mine. I heat the pan slowly up to the proper cooking temperature (about medium-low). Then I coat the pan with a thin smear of butter. I like to rub one end of a stick of butter to coat, but canned butter spray works just as well. Make your crepes in the usual way (they should not stick except for the sacrificial first crepe - which always sticks a little) and then let the pan cool slowly on top of the stove when you are done. Once cool simply wipe clean with a dry absorbent paper towel. Store the pan where nothing will touch the cooking surface. When ready to use wipe the cooking surface lightly with another paper towel that has a tiny bit of cooking oil in it. Believe me folks it's not that hard to get this pan to perform, but you have to follow these simple rules.

This pan is excellent for pancakes, crepes, etc. (I don't find it all that great for eggs). No problems with sticking, but I do treat it much as I do my reg. cast iron (apply a light coating of oil after each use). It also sees a lot of oven time in making homemade pizza--the crust bakes perfectly! Due to its lighter weight, convenient size, and easier clean-up, this is one of the more frequently used pieces of cast iron I own.

Don't tell Alton Brown, but I ignored his advice, and got myself a crepe pan. Never mind that it has only one practical use in the kitchen...it improved the quality of my crepes considerably over the teflon pan. I'm glad I did.

Bought this for use in our RV as we didn't have electricity. It worked get on the propane stove. The weight of the pan makes for even heat distribution. It should work great on a glass top or induction stove as well. It cleans up by just rubbing the excess oil off with a paper towel.

What a great pan this is! The hubby and I used to make crepes with a small pan a long time ago and somehow got out of the habit. We then fell back in love with crepes after returning from Europe where they make the BIG crepes. This makes professional crepes so easy to master! We cook on a gas stove and they are ready in no time. We often sauté spinach, mushrooms and other veggies and add it sausage crumbles, or smoked salmon or nutella banana or chocolate and strawberry. You can completely let your imagination go wild-the possibilities are endless and this pan will last you a very long time. Excellent quality! The spreader and turner are also great and make the whole process easier. We have also found that any leftovers can be frozen between parchment or wax paper and are easily thawed to make a quick and easy breakfast or dinner. VERY happy with this pan and would definitely purchase as a gift for someone special or as a gift for the le creuset collector that loves crepes! You can't go wrong with this pan!

I was looking forward to making crepes with this pan. Sadly, I have not been successful. I blame it on electric stove. It took me almost a year to figure out correct temperature needed for crepes not to stick. I hope from now on to be able to make good crepes. It is too heavy for people with arthritis.
