Enameled cast iron is a remarkable and robust material that performs well with modern requirements for food preparation and cooking. Whether you choose to stir-fry, slow-cook a casserole, sear a steak or bake a cake, there is a shape that is suitable. Cast iron performs well for either slow cooking or high-temperature searing.

Cast iron can be used reliably on any heat source, including induction, and with any oven or grill. It has the ability to retain heat efficiently, which allows for use of lower heat settings in stovetop and oven cooking. On the table, a hot covered dish will keep food hot for second servings.

Cast iron can also be used to keep foods cold. A chilled dish becomes an ideal cold food server on a hot summer day. It can also be placed in the freezer for food storage or advanced food preparation.

The vitreous enamel surface is impermeable and therefore ideal for raw or cooked food storage, and for marinating with acidic ingredients such as wine.

Cooking tips for grilling:

Grills may be preheated to reach a hot surface temperature for searing and caramelization. This advice does not apply to any other products. For correct grilling and searing, it is important that the cooking surface is sufficiently hot before cooking begins. Sear lines from ribbed grills will not be produced if the pan surface is too cool, or if the food is too wet. Place the empty pan on medium heat and allow it to heat for several minutes. Do not add oil to the cold pan -- the oil may become too hot and smoke.

Take a few drops of water on your fingers and scatter over the hot surface. If they sizzle and evaporate almost immediately it is hot and ready for use. If the water produces steam and has no sizzle, heat the pan a little longer and repeat the water test again. When the surface is hot enough, lightly oil it with cooking spray or brush it with oil using a Le Creuset silicone basting brush. Vegetable, ground nut or corn oils are recommended. Olive oil may cause excessive smoking.

Once a patina covers the cooking surface very little oil will be necessary. For distinct sear lines, leave the food undisturbed on the surface for several minutes. If the food is moved too quickly the lines will be poor, and steam from the food may be released onto the surface.

Any food for grilling or searing must be quite dry before it is placed on the hot surface. Wet foods will not achieve good sear lines and may result in a steamed appearance and flavor. Use paper towels to pat off excess moisture from foods. Oil can then be brushed over the food if desired. Foods that have been marinated should also have excess moisture removed with paper towels.

I live in the city, and don't have access to a grill. This pan makes perfect steakhouse grill lines on your pan. Just heat it really, really hot -- to the point of smoking -- on your stove first. Then turn on your broiler to High. Throw on a steak and shove it under the broiler. Two minutes later, rotate the steak 45 degrees. Flip steak and repeat. Professional gourmet steakhouse steak- I swear.

But this pan will get oil splatters on it that will turn black under high heat circumstances. Are you going to spend 3 hours scrubbing every nook and cranny with baking soda and a scotch brite? No! I won't either. So I live with the black oil stains, and take them as badges of honor for all of the previous delicious meals past.

However, I'm slightly OCD - and the black spots do bug me. I recommend this pan highly, just get the black color. You won't see any stains, and you'll just love this thing.

For panini fans: Get the panini press which fits with this perfectly.

The perfect San Francisco panini: Get a French roll, slice down the middle and slather the insides with olive oil. Lay on a few slices of prosciutto, a few roasted red peppers packed in water or oil (from your deli or condiments section of the grocery store), and a few generous slices of mozzarella. Sprinkle sandwich with a little salt. Grill in pan on medium heat until the first side is golden. Flip sandwich. Adjust heat so that when the second side turns golden, the mozzarella is just starting to melt. Bite into heaven.

Does an excellent job of cooking whatever you put in it without drying the food out. Chicken, steaks, fish, shellfish, everything, comes out moist and flavorful. Gives the appealing appearance of grill lines without the drying effect of the outdoor grille. I really enjoy cooking with this grill, and often choose recipes based upon being able to use the grill.

I bought this grill pan for those times when one cannot grill on the barbecue outside due to adverse weather. We actually have a George Foreman grill which works really well but is larger than this pan and requires an electrical connection. This Le Creuset grill pan is quicker and easier to use with results that are at least as good. It is beautifully finished and, with nicely formed ridges on the bottom of the pan, distributes heat evenly. I'm very satisfied.

First off, I disagree with everyone here who says this pan is difficult to clean. Every time Ive grilled whole fish in it, theyve stuck so Ive had to soak and scrape. Not hard.

But for the same reason that its easy to clean, its screwing up the fish in the first place. Its the enamel. When youre grilling a fish, or most other meats, you want to have them make contact with the grill when its very hot, so that the meat contracts enough to not bind to the surface. Ive found that no matter how hot I get the grill, and Ive had it over a high flame for 45 minutes before putting a fish on it, its just not hot enough.

But I keep it around because its great with anything thats not as delicate as a whole fish. Burgers, veggies, paninis, chops, love it.

I am a big fan of Le Creuset enamel cast iron Cookware......I have and use several pieces reguarly.This is a premium grill pan.Extremely well made and very attractive in any kitchen. I have read other reviews of this cookware and some people complain that food sticks to the cooking surface.I think this occurs because they are not following the Le Creusets directions for pan usage. This grill pan if used properly will over time develop a cooking surface patina and become very close to nonstick. Small amounts of fat and lower cooking temperatures are needed for good results. Folllow the directions Le Creusets provides for usage and care and you will have this pan for life! This new color Marseill is gorgeous.....the color of the Ocean

I live in an apartment and can't own a grill. This pan is wonderful. It grills chicken perfectly and cleans easily. I make tasty low-cal grilled cheese sandwiches by spraying the sandwiches with Pam and pressing them on this grill. They come out delicious. My favorite thing to do is marinate chicken breast in buffalo wing sauce, grill it on this pan, and then put it on a sandwich and grill the whole sandwich in the pan. Best of all, it cleans easily with hot water and a plastic brush. I haven't had any problems with it.

Grill your meat and veggies on this grill pan. They will taste like they were grilled on an outdoor grill. It also holds more food than it looks.

It is a cast iron pan. You need to pre-heat first before you put anything on it. I spray a cooking spray before I put meat on this. Clean up is easy. Just scrub it with a sturdy plastic brush under running hot water (not too hot). After that I put it on the stove and heat it up until the water evaporates. NO SOAP needed. Outside enamel gets blackened, but hey, this is cast iron. It meant to be rustic. Or try one of those special cleaners. I LOVE this grill.

In summary, I really like this pan now. But it took one round for me to get there.

I was a bit nervous getting this product because there seemed to be some real haters reviewing this product. It bombed the first time in that it built up lots of black gunk and smoked a lot, and cleaning it the first time sucked -- lots of elbow grease went into it. However, then I made sure to rub oil on it before storing it, and then the next time I used it, I didn't have the black build up and smoking. I also poured vinegar in it after using, heated it up on the stove on low heat, and then took a rubber spatula to gently scrape the gunk out. That helped tons with cleaning.

I really enjoy grilling scallops marinated in pesto with this pan. We often put the pan on top of our outdoor propane grill, as scallop-grilling can make the interior of your home smell weird.

It's hard to say whether my bad Round 1 was due to operator error or if that's just normal for this pan. Either way, I would recommend getting this pan. It's of high quality and does a great job.
